    for the lasagna: look out for lasagna sheets made from lentils or similar at the organic store! they will also keep you fuller for longer than regular pasta

    Rose , try grilled eggplant instead of the zucchini in the lasagna. Here in italy we make "melanzane parmigiana" wich is litterally a lasagna but with fryed or grilled eggplant instead of pasta....it is delicious !!!!!

    @@flow4458 yes exactly. It s so delicious.. I am italian and i hear people in the usa saying "chicken parm" and other "parm" whatevers... In reality the only italian recipe for "parmigiana" is the one with eggplant .

    I make my vegan lasagna with grilled vegetables that are a mix of eggplant, zucchini, and bell pepper! With some tomato sauce and vegan cheese! It’s awesome!

    So I made your lasagna I was right it was amazing! I used canned lentils instead of dry. I added a little sweetener to the ricotta. I wilted my spinach in the sauce. I cooked mine about an hour instead of 45mins. I think those are the only things I did different. So yummy must try guys!

    Rose, I'm sure this makes me sound like a total weirdo but you make me to be a Canadian. I will be turning 65 in less than 2 months and I remember purchasing "The Vegetarian Epicure" when I was around 18. Needless to say, your recipes are beyond fabulous as well as yourself of course.     I don't even soak my lasagna noodles, I just straight up assemble the dry noodles with the sauces and pop it in the oven Great tips, thank you rose ❤️

    I like to water sauté onions, mushrooms and zucchini. Once it cooks down, I add to the sauce or layer on the sauce and tofu cheese. Your tofu ricotta is my go to for my lasagna every time, so easy and delicious! I don't miss regular lasagna even thought it was one of my favorite foods.

    I recommend getting a mandoline if you make veg noodles a lot! They're fairly cheap and make beautiful consistent cuts much faster. But please, please be careful. I highly recommend buying a cut proof glove because the hand guards are so clumsy that I don't know a single person willing to use them. Both my parents have cut themselves badly without them. Just spend a few extra bucks for the glove. Also, spiralizers are great. My old go to dinner was lentil marinara over zuccini noodles. You don't even have to cook the veg. The residual heat takes care of that. Cooking or salting/draining does remove a bit of water tho if you're worried about your sauce getting watery (or you could just plan for the extra water and reduce you sauce more. You do you lol)

    Quinoa is coated in Saponins, so often is bitter and can cause tummy upset, so a vigorous rinse in water helps remove that coating.

    Omg!! The lasagna looks scrumptious!! And it was so smart of you to only stir in the lentils before assembling the dish. It keeps the lentils intact, for a little more texture and bite! Also, try dehydrating the zucchini slices a bit before you start your lasagna... Also a texture thing. Awesome! 🤩👍

    I would half the tomato paste with tomato or tomato-veggie juice & skip the water. I’d add a little water to the tofu ricotta; & I’d add chopped veggies to the sauce, like eggplant, mushrooms, sweet peppers, onions 🧡😋

    reckon i will be doubling that tofu ricotto part (it looked AMAZING!) and i will be smearing it on all the zucc slices as well as the noodles! plus i will probably add more everything so that pan fills all the way to the top! layer of braised mushrooms, layer of traffic light capsicum strips, layer of refried black beans, layer of broc and cauli rice, layer of TVP marinated in soy sauce mixed with bbq sauce, layer of all the leftover veges or grains in my fridge! layer of EVERYTHING! Cos why not?! lol THANKS AGAIN Rose, another BRILLIANT video. AS ALWAYS!

    Lasagne: I make mine in a completely different way! The sauce is never based on tomato paste but always on crushed/diced tomatoes (no ground meat substitutions as I never liked it) and I have never (even before going vegan) made it witch ricotta cheese! Now I just make a lovely béchamel (sometimes based on chickpea flour if I want to make it more filling and it works great too) and sprinkle some vegan cheese on top and it is my fam's favourite :D Also, I just love how casual and at ease you were with not cleaning the spatula - I am sure you are the most likeable person ever!

    Can you share your vegan bechamel recipe? I thought it usually includes dairy? I've never made it before. I grew up in a ricotta house and we always went for baked ziti over lasagna--same flavor, less labor. Also, since you spelled lasagna with an "e" at the end, I'm curious where you're from

    @@msjkramey When it comes to lasagne/lasagna - one is British the other American and as I am not a native English speaker, I just write it differently every time ;P When it comes to béchamel, it would be hard to describe as I never measure anything :D But the base is olive oil/margarine (with the first being used by us more often), white flour or chickpea flour(you really can't tell the difference if done well), soy milk, nutmeg, black pepper, salt and nutritional yeast. I remember Michael from Monson Made This showing a similar recipe once so maybe you could go by his measurements with this :D The key is to fry off the flour with some oil at first and then slowly add milk while constantly whisking so that not to get lumps (but if they appear, you can use an immersion blender and it solves the issue). Then you can add pretty much any flavourings you want :)

    @@margarett_b nothing is worse than uncooked flour in your sauce/gravy lol. So what I'm getting tho is make a rue and then add non-dairy milk and seasonings to your preference? Almost like a white gravy? I think I can manage that, even without an exact recipe lol. Thanks for the reply

    Right?? I'm not a vegan, but I would eat that whole pan. And I also feel like I could feed it to my family and they wouldn't even notice that it was vegan and healthy. They'd be too busy fighting about who gets second and 3rd helpings lol

    I love, love, love cooking for and feeding people and this seems like the perfect "compromise dish" without the compromise. My vegan family and friends could share a meal with us, my family who wants something heartier would be satisfied, most picky eaters would be okay with it, and the health nuts would prob be the only ones that picked up on the amount of veg/fiber and be appreciative lol

    I would add a little bit of oil to the lasagna. For diabetics, a little olive oil will help prevent spikes in blood sugar levels. P.S: Oil free peanut butter is also unhealthy for diabetics. We need healthy fat in our diet to regulate our blood sugar properly

    I have tried cooking lentils so many times and idk if it’s because I’m inpatient lol or what but they are always crunchy!! I want to be as soft as lentil from Indian restaurants 😭

    What size can of tomato paste? The directions say 263 ml, but I can't find any cans that measure in ml!! Tomato paste cans are measured in oz and gr..

    I hope those Lentils cook. I would of taken the time to cook them. I wanna know if the Lentils was done. lol. It looked really yummy though. Those popsicles looked really good. She use to press her Tofu though. lol. Love Air Fryers. Best invention yet.

    Really Fab Recipes . I am so looking forward to making these Dishes. You are ReallyFab . I wish you gave the amount in weight of Tomato paste in cup or Ozs . As I am in Ireland c& you in Canada.     I have spinach I need to use, my pantry is bursting with beans/legumes and I'll find any excuse to eat zucchini, so I'll definitely be trying the lasagna recipe but with my own sauce recipe (I'm a picky bitch but yours still sounded pretty good :p ). Do you have issues with the veg making things soggy or overcooking? I rarely bake big casseroles for those exact reasons
