Hey Paula, just a note, I make a similar cake but bake it in a bundt pan. You poke the holes also, but in a bundt pan, the cake pulls away from the sides, and the icing around and on top from the holes. Then you let that set before turning over!!! Ohhh so yummy!!!

I made this cake waaaaay back in the day. I still have the recipe card in my recipe box and it is a treasure to me b/c each recipe has a memory. The frosting for mine used sugar, a stick of butter and a small can of evaporated milk in place of the sweetened condensed milk. This past autumn I was craving something spicy so I made Doodle cake and added cinnamon to the cake batter, 2 heaping teaspoons and it was so yummy. I frosted it with a cream cheese frosting and topped that with black walnuts...it was the perfect fall treat with a cup of milky Earl Grey tea.

I made this cake today...simple and delicious! I don’t know if anyone runs into this problem, but when I made the icing, I never cooked it any higher than on medium and had to constantly stir it once I added the sugar and condensed milk bc it kept getting brown from the bottom as though it was scorching (even though it wasn’t). I started using a whisk. I didn’t use a non-stick coating pot, but one that I’ve cooked fudge icing and fudge sauces in before with no problem. By the way, there’s less than half a cake left by the time I let family try it. They gave it a thumbs up! I will make It again!

My recipe from waaay back in the day (1970) called for a small can of evaporated milk instead of sweetened condensed milk. The small can of evap milk is 5 ounces/2/3 of a cup. It too was added to the butter (1 stick) and sugar ( cups and a half) and boiled 3 to 4 minutes, then you add the coconut (and nuts in my recipe). It thickens up as it cools. You might try that instead. btw, it's delicious with a cream cheese frosting too; and in the fall I add 2 heaping teaspoons of cinnamon to the cake batter and do the cream cheese frosting.

I had problems first I put the vanilla in with the sugar and butter. It was like the vanilla was getting burned. So I had to strain it before I put the coconut in it.Everyone loves the cake.I think the icing is a little to sweet. Wondering if I could cut back on the sugar. Very good cake.

Did you ever take a small stick and wiggle it in a small mound of dirt hoping a bug would pop out? My GMother taught me this as a child, and I would call it a doodle bug. So I would say definitely poke holes in this doodle cake.

I never did like coconut. What I think would work great in its place would be orange zest.
