    was going to write that myself....I can see doing the challenge to use up their home canned goods, but no coffee, NO WAY....not for me, people don't even want to be around me if I can't have my coffee....best of luck to them though!

    You 100% need salt to survive, and those are their salty foods, I'm sure that they taste extra amazing with the restriction they are putting themselves through.

    Wow, very impressive guys. I think that this series is going to be some of the most important videos you two have put out to date. Here in Alaska we live at the end of the supply chain and the subject of "what if" or "can we realistically survive on what we grow" has come up many times with our gardening/farming friends. And you two are actually going to do it. One thing that really surprised me already was the number and volume of canning jars you emptied in just the 9 days. Doing some simple math it is a bit overwhelming when you realize how much food needs to be put up to make it through the winter. Especially with our short growing season. I am really looking forward to the remainder of your videos through the month and your conclusions

    This is very true. I can only imagine how much more difficult it would be feeding a family, with teenagers. My current food storage would be gone in the first 30 days. This is a great challenge indeed. Eric looks like he's lost at least 5 pounds.

    I ran myself out of sodium once. I cooked all my meals with no added salt and was working out pretty vigorously. It felt like a heart attack.

    If your canned food didn't have any salt I'd recommend that you take salt tablets to avoid a deficiency. Edit: You may still be hungry because the food you eat is less calorie dense. It's very easy to add a few hundred calories to a meal with a hearty slice of bread. If you are doing that a few times a day that can be a significant source of calories for you. The general rule for gardeners is that it's feasible for a really avid gardener to grow 80% of what they eat, but that accounts for 20% of their calories. Rice, bread, beans, corn, all very calories dense and easier to buy in than to grow for most of us.

    Also...Fat (and fiber from fresh veggies esp leafy greens) helps provide that satiety “I’m full” feeling - especially healthy fats like nuts, avocado, etc or the less healthy but still delicious meat fats. Doing what you guys are doing, I would miss bacon 🥓!!!

    Calories are just a count of how much energy there is in food. It's not a food group and thus doesn't fill you up. Sugar, like other processed carbohydrates, is empty calories, which means it's devoide of micronutrients. To be full, you need protein to augment slow-release carbohydrates in the leaf vegetables.

    tardis mole if you don’t take in enough calories your body pulls from your adipose cells and they shrink. When they do that they stop releasing leptin, a hormone that makes you feel less hungry. A calorie doesn’t have to be a food group for your body to pay attention.

    sub4rctic doesn’t really matter if it’s sweet corn if not. Dehydrated corn makes cornmeal.

    The rule for home food storage is "Store What you eat and Eat what you store". I still eat this way as foods have a time limit for freshness and we need to change things up. With your wonderful selection and creativeness this should work out well. You are not just eating off your land you're enjoying the years harvest. Great example to those who waste food that gets left in the crisper to become compost because you can always head to the store or order in. I am so proud of you being so honest in these New Year videos. Eating healthy by growing it, hunting for food. You can cook it , blend it ,season it enjoy it. Next year you could can bread or cake. Yes higher protein meals will keep you from getting hungry. Thanks for your dedication to this lifestyle.

    @@KnolltopFarms Canned salmon is less inspiring than well prepared fresh salmon. I canned a lot as a teenager and at some point I just couldn't do it anymore. All of it went into the freezer or the smoker from that point on.

    This kind of video was SO satisfying. I've always loved watching canning vids, or tours of cellars but I've got to say this challenge really showcases the best part of canning your own food. If only you were able to harvest your own sea salt, summer is the best time.

    I just love you guys! You're my absolute favorite channel! That being said, I can see some nutritional revisions being made in the very near future of this particular challenge. You guys are smart enough to understand what changes in diet will need to be made. Your both nothing but muscle and bone as it stands. Four weeks of this challenge seems like too, too much for your little bodies to handle. Especially with all of the work that you guys have to accomplish daily. You did a fantastic job in the first week. Keep up the good work, and don't worry if you have to change gears, midstream. We, your faithful subs, can handle the changes.     I grew up in Anchorage and my Mom always had a garden. EVERYTHING grew TWICE the size that it grows here in the South 48! My Dad was a fisherman and caught salmon up the wazoo! I can't stand to look at it now! The one thing I still dream of is caribou sausage! So delicious! I miss the King Crab,too. May God bless you with His bounty!

    Well, the no coffee would kill me, or I'd kill someone 😂. This will likely help you plan better for the coming year, as to what foods you will make sure you get to can for the winter months. I'd be sick looking at salmon by now, but needs must. Grow your own beans this year too and you'll have those to dry and use. Good luck.

    Best wishes for the new year. Been loving your channel for over a year now I think. Really looking forward to this series. It amazes me how much you got out of the garden and all the hunter gathering. You guys got so much done in such a short amount of time on your property...and this while you are basically in the bush in Alaska. Don't apologist because you need to buy certain things that you can't produce yourself. But challenges like these really make a good showcase for how self sufficient you can live with the right amount of preparation and dedication.

    Just a tip for chickens laying more in the winter is leave lights on and give them warm water to drink and a warming lights. It will give them the illusion of warm sunny days which makes their body's lay eggs more. It wont be like summer but will be more than winter laying. It worked for us and we had quite a few eggs during winter months

    No dairy and no flour is rough, and no salt or pepper? Holy moly. I figured you would just use what you have on hand, month of not buying groceries but sustaining on whatever is currently on hand. You can do it!

    If you have any Oak trees you can collect Acorns and make coffee. It will count as being harvested from the wild. As a note to salt. It was even used in ancient times.

    Oak trees don't grow in Alaska. I don't think any nut tree grows up here.

    We eat much like this on our homestead, except for homemade bread, salt, and coffee are always available. Good job with thinking through your meals. Most of us don't have that much time to spend over the stove, but you show how valuable a garden and hunting can be. ❤️

    I haven't been able to find it again but there was a good You Tube on a guy that grew, dried and ground hot peppers for his seasoning. He also grew, sliced, peppered and dried zucchini. It came out like potato chips but with a hot pepper kick and no fat. If dried hard enough they should last a long time, especially if they were put in jars to keep dry. If anyone knows who it was that had the You Tube on this please let everyone know. We have tried it as best as we could remember and it turned out great. Good luck with the next 3 weeks.     Damn i just love you two. We (hubby and i) want to live more thay way. (We live in idaho). We hunt, fish, forage, and have a large garden that we can and freeze and dehydrate from. Just wish that we could be out farther. I have to say, watchin this vid... i KNOW id cheat and use salt. Lol. Cant wait to see more. I really loved the longer video. Coulda watched much longer to be honest. (It would also be fun to watch your reactions and opinions while you eat what u made. Much love and happy new year

    I know everyone is concerned about your salt intake for 31 days. Honestly, I believe you will do fine. Salt is found naturally in vegetables and meat. Eight high sodium foods are beets, celery and carrots, spinach, chard and meat. If Christ was fine for 40 days with nothing but water, you will be fine. Are you thinking of adding a nanny goat to have kids and milk to produce your own milk and some cheese. Goats are easy to raise. I have never raised Rye but they say it is easiest to grow and grows in cooler climates. Just a thought! I really enjoy your videos! Wishing you all the best!
