Lime it up! How to make Lime Syrup for cocktails

Lime Syrup goes great in cocktails. I've been asked a few times to make one. Check out this week's syrup. It's sweet, it's sour and it's perfect as a Lime Cordial.

    As part of my 'Temperance' approach I tried this with a little less sweet and poured a big shot of it over lots of ice, some micro rinds and tonic water. Absolutely delicious as a long drink for teetotal adults

    One of the many things that I have to come to enjoy and love about the art and craft of cocktail making is the commonalities and differences between bartenders. I would have initially made oleo de saccrum with organic limes. Heated the syrup to 240 degrees for 12 minutes. Used organic Cane Sugar and filtered water. Never would have considered adding fresh lime juice at the end to brighten the syrup, along with adding the spices that you mention to the syrup. Admire the idea of adding orange peel for complexity. I like to make different versions of syrups and test them out in cocktails all in the name of science. Even have a notebook with comparisons. However, what I have learned is at the end of the day... Rare spices, trendy ingredients, and fancy terminology does not affect the art and craft of cocktail making. What truly matters is a smile on your face and a drink in your hand. Cheers 🥃😋

    Can you do a series on more of the technique bases of syrups. (I wanted to make a living making syrups) There's a device thats meant for Infusion via a liquid (booze) and solids (fruits etc) I think I can make an honest living combining the two. Your videos teach me no matter how diverse life is. Tradition and ambition always wins.

    This seems like a really tasty and refreshing winter cocktail syrup with all the spices in there. Any drinks you would suggest trying this with?

    I’ll be using it in a cocktail in the next episode so stay tuned. You could use this lime syrup with all sorts of cocktails. Any drink calling for fresh lime and simple syrup would work just fine. Try it in a frozen Margarita, a Moscow Mule. a Daiquiri or even a Cosmopolitan. How about a G &T? Have fun experimenting.     An open bottle of lime syrup made with fresh ingredients will keep for 2 weeks in the refrigerator. Fortify it with some vodka and get a month out of it. It probably won't last that long though. Cheers!

    I just found your channel and LOVE IT. Already made the pineapple syrup (yum) which was so much better than the recipes I found while googling. I am surprised at the smaller following you have, might I suggest you venture into the work of tiktok? I’m not sure if you’re there yet, but bartenders with less talent/showmanship than you are hitting it big. I’m not sure if you’re interested in that, but I bet you would find a lot of viewership over there that you could bring here! Anyway, rant over. Thank you for continuing to make these videos!

    Love your videos! Trying to incorporate some of your techniques into the bar I tend at. How about a watermelon syrup next? Also you’ve mentioned that you make your own clear ice; that could make a good tutuorial aswell! Thanks!

    I'd love to do a watermelon syrup but, I have to wait until watermelons are in season. So, it probably won't be until summertime. It's still the dead of winter here where I live and those bad boys need to be ripe and sweet. Clear Ice? Not a bad idea. Thanks. Cheers!

    Recent subscriber. Like your channel and your style. I haven't tried this yet, but I'm curious why so many extra ingredients (cardamom, Juniper, coriander seeds--almost like pickling spices). I had expected simply lime zest and juice, water and sugar. Again curious why you add these other ingredients. Or do you also make a "simple" lime syrup with just limes, sugar and water? Do you use this to make "classic" lime cocktails, like gimlet, daiquiri, caipirinha, etc. ?

    I could have easily made a lime syrup without all the spices, but what's the fun in that. Seriously, I love experimenting. I added the spices to compliment and accentuate the lime. I have, and still do make classic cocktails with traditional ingredients, but I'm always asking myself, where can I take this? I like to push the boundaries and challenge convention in the world of cocktails through my passion, skill, and imagination. Cheers!

    I find the spices in my lime syrup to be quite subtle. It works well in a gimlet.     Hi! New subscriber, loved the video, i *just* finished making it, unfortunately i didn't found lime because I've been told it's not the season yet, so i used lemons instead. I hope its ok.. I've got 3 q: 1. How do i preserve it? In a fridge? 2. For how long is it good for before it goes bad? 3. What drinks are you recommending to make with this syrup?     Hi. I always add alcohol to preserve it longer. With alcohol it’ll last a month maybe two. Without, it’ll last a week or two.

    If you preserve it with alcohol it will last much longer than if you don’t. Probably close to a month.

    It won't be your traditional Margarita recipe when using lime syrup however, it would totally work. Your Margarita will be extra limey. Just omit the regular simple syrup. Try it in a Tom Collins or even in a Whisk(e)y Sour. You can also drizzle it over pancakes and waffles, or over plain yogurt. It's very versatile. Cheers!

    Low heat is best. It allows the flavours of the fruit, herbs, and spices to meld together slowly. Also, you can control the rate of evaporation easier. Low heat will add a rich aroma and deep flavour. Cheers!
