How to make Simple Syrup and Sweet & Sour Mix

We're going to do it a little different this week. Instead of a drink, I'll show you how to make 2 important bar essentials that can be used in many different Cocktails. Simple Syrup and "made from scratch" Sweet and Sour Mix
These mixes are an essential part of cocktails such as Mojitos, Daiquiris, The Mai Tai, Alabama Slammer and many many more.

    Thank you for your encouraging words. The shelf life of Sweet & Sour mix with egg white and vodka in it will still be short-lived. We're dealing with raw egg whites so, it's best to use it up within a couple of days, a week at best. Years ago in the bar, we'd make up two batches, one with egg white in it and one without. The reason we did this was because of the volume of drinks we'd make in a single night. Egg white is an optional thing and if you're not making dozens of cocktails in an evening, then add the egg white directly to your cocktail at the time you make it. Keep it fresh. Cheers!

    Also, should i use lemon concentrate by monin syrup for sour mix? Or shud i use freshly squeezed Lemon & Lime? How many should i squeeze?

    Fresh is always best. Monin syrups tend to have preservatives and other nasty ingredients in their products.

    You can use brown sugar, however, depending on how dark the sugar is, the colour of your sweet & sour mix could be unattractive. Then when you put the mix in a cocktail, your drink might look unappealing.

    Once u add that egg white in it. Is it still good to keep for 6 months in fridge or does it go bad quicker?

    Hi Michael. Sweet & Sour Mix won't keep for 6 months with the egg white in it. We use to make it that way years ago in the bar because of sheer volume. It would be gone by the end of the night. Ideally, you want to add egg white to your cocktail at the same time you make it. That way you know it's fresh.

    Can other liquor be used besides vodka to preserve longer or is Vodka the liquor to go to & which vodka. Thanks in advance👍

    You can use practically any spirit to preserve a syrup. However, vodka is very neutral tasting and won't change the syrup's taste profile. Use any inexpensive brand of grain spirit that's at least 40% alc/vol or 80 proof. Cheers!

    I think i will make a new one tomorrow.. Can u pls guide me steps by steps to make a perfect sour mix ..im confused bout the amount of SUGAR, LEMON, LIME to use if i mixing using 34 oz carafe.. pls pls help me !! Thank you in advance...

    If you're aiming for 34oz. of sweet & sour mix, use 2 cups of water, 2 cups sugar, 6 lemons and 8 limes, give or take. The juice should yield about 2 cups. Make the 2 cups simple syrup first and then add the 2 cups of juice. It's that simple. Have fun experimenting. Cheers!

    +Nyren Dsouza Hi thanks for the suggestion I can totally make any of those! Back in the 80's that's all I did. I use to have at least a half dozen of these stored in my fruit cellar waiting for the day to filter. They're very easy to make but take a bit of time. How about a Tangerine Tea Liqueur? It's a Bruce original and It's delightful. Made with fresh tangerines and Brandy that is so much better than Triple Sec. More body and flavour it's a warming elixir of fresh tangerine and cinnamon with the warmth of brandy. Well worth the time on making this one. Stay tuned for future episodes and I’ll hook you up with some great recipes!

    I've never used egg white powder when making sweet & sour mix. I would imagine it would work just as well considering powdered egg whites are usually made from dried egg whites. It would have to be reconstituted with water before adding it to the mix though. From what I understand the reconstituted powder whips up just like fresh egg whites. One advantage is that it is pasteurized so it can be used without fear of food poisoning from salmonella. Another alternative to fresh egg whites or egg white powder is liquid egg whites in a carton. It too is pasteurized. Cheers!

    The egg will significantly reduce the shelf life of your sweet and sour mix. We use to make it every day in the bar because we'd go through it that fast. At home, with the addition of egg white, it would be best to use it up within a day or two. Keep it refrigerated. It's always best to make it fresh and use it right away. Cheers!

    +Stefan It all depends on how much juice is needed for a specific cocktail. You'd be surprised how much more juice you get when you squeeze both sides. And I don't like to waste. Also, as a bartender I'll make more then one drink at a time in the same shaker so, I need more juice. Then there are fruit driven pitchers of Radlers and Sangria where you need a lot of fresh citrus. Practice makes perfect so keep at it! Responsibly of course ;)

    I always do both sides when pressing fresh fruit. You get more juice that way. Cheers.

    Ha .. if you scroll through all the comments I’ve answered this quite a few times. I always squeeze and flip and squeeze again to extract all the juices. Part of it was cut out during the edit.

    Honestly, you'll end up using the sweet and sour mix long before 6 months are up. Believe it or not, I have had success in the past with keeping it in my fridge and trying it after 4 months. It hadn't turned bad at all. The only thing about it was, it tasted stale. Another thing I've done is made sweet and sour ice cubes. But once again, when I thawed it out it wasn't near as fresh as when I first made it. I've done a lot of experimenting over the years and what I have learned is that if you're going to make anything with fresh ingredients use it up while it's at it's peak of freshness. It simply makes a better cocktail.

    I absolutely know how to use a citrus press. I always squeeze then flip it and squeeze again to extract more juices. The flip was cut out.
