    Hey! Thank you for this. I may have to revisit lima beans. I never knew what to do with them, but I’m going to try my hand at them. Your videos are a calm in the midst of the chaos going on in the world.

    Ear Hustler An easy recipe is lima beans with some tomato , like diced & a little horseradish heated. My brother-in-law loved Limas & I made this for Easter one year, I think he ate most of it. Very simple dish.

    Hi Judi! I just found your channel the other day while trying to find out how to cook dried black-eyed peas in a reasonable amount of time, so I would appreciate it if you would make a video on cooking dried Lima beans! The other one worked like a charm, and I'm wondering if the same cook time would apply to Lima beans? Thanks in advance!

    Hi Lyra! Thanks for watching and sharing! I'm glad the video was helpful to you. So far, I have not released a video on cooking dried lima beans. However, the procedure would be the same as cooking any other dried bean or pea (like the black-eyed peas). The cooking times may vary, so when in doubt, check them here and there for tenderness. They are ready whenever they are as tender as you want them to be. Cooking times can vary even when cooking the same type of bean or pea, depending upon how old they are (older ones will take longer to cook). I DO have a blog post that coincides with most of my videos (links are in description boxes). AND, I have one on Lima Beans 101 where I DO include directions on how to cook dried lima beans.     Hopefully you can help me, I have dried baby lima beans I bought, I have an All American 921 canner & want to can these beans. All recipes I see are for fresh lima bean, if I soak them overnight would they be the same as fresh so I can follow many of these recipes. Lima beans have been my favorite along with spinach forever, I was a strange child. Also if you can tell me how should I can them in 8 oz jars & if so how much should I put in each jar? I hope you can help me, I enjoyed your video on Limas. When I went to the frozen food aisle after the pandemic started, I always could find my lima beans because no one wanted them 🤓😁

    Hi Susan! I too love lima beans! It's hard to imagine that some people don't care for them. I did a quick internet search and found reference to canning dried beans (including lima beans). They should be soaked then cooked first before canning them, according to this site... growagoodlife.com/canning-dried-beans/. (I had to do some checking since I have not canned dried beans.) It makes sense to cook them after soaking them since canned beans are actually cooked so they can be eaten directly from the can. I would not consider soaked dried beans to be equivalent to fresh beans, but they probably come as close as you can get to their fresh counterparts. However, even fresh beans must be cooked.     Interesting video about Lima bean comparisons. I love Lima’s especially cooked with some ham and a touch of salt. So good! My question is, have you ever tried to pressure can frozen Lima beans? I know that sounds weird but we are moving and need to clean out the freezer where we have lots of frozen veggies. I know that most veggies can be dehydrated but was wondering if they could be pressure canned as well? Anyway, love your video. Thank you! New sub.

    Hi Dan! Thanks for watching, commenting AND subscribing! I DO appreciate it :) Personally, I have not tried pressure canning frozen vegetables. You're right, frozen veggies can be dehydrated. Since I use a dehydrator, I'd be more inclined to take that route if needed. We recently moved and I was faced with the same issue. I just made a point of eating all the frozen foods we could possibly eat before the move, and we were able to finish them up that way. What few things I had left, I gave to a neighbor. Regarding pressure canning them... Here's an interesting article that may answer your questions about canning frozen vegetables and other foods.     Judi in the Kitchen Okay Ms Judi, thank you for the link. I’ll look into it but like you, I’m thinking for the best results it would be best to stick to dehydrating the veggies! I know that works. Now if I can only find that box with the dehydrator!! Lol!! Have a blessed day!

    @@Dan-yw9sg Oh Dan, I feel for you there (looking for the box with the dehydrator)! I agree...I think dehydrating the veggies would be your best bet for now. If nothing else, they'll be lighter and easier to transport during a move! Take care and best wishes to you and yours :)

    Julia Klee Thank you! Yes, moving is a pain. The hard part is trying to find a certain box in a stack of boxes to the roof. They all were labeled on the top and one side as to the contents. But it amazes me how half of those boxes wound up with the side labeled toward the wall! Lol! Have a blessed weekend!

    @@JudiintheKitchen I was in the grocery today and a 16 oz. can was $2.89. I was going to get two cans, and realized my two cans of lima beans were going to cost $6!

    @@giveadoggyabone1 I would have opted for frozen ones, or at least compared the prices and amount you get with canned vs frozen. Yes, the cost of food IS going up, way up, sad to say. Take care :)
