Let's Make a Fraisier with a Local Pastry Chef!

FRAISIER BY FRED
Serves 6
INGREDIENTS
FOR GENOISE CAKE:
4 eggs
120g (4.23 ounces) of granulated sugar
120g (4.23 ounces) of Type 55 Flour (All-Purpose Flour)
Whisk with a hand whisk over a bain-marie. The mixture must heat up to reach a uniform temperature of 60/65 degrees Celsius (140-145 F) without exceeding 80 degrees Celsius (176F).
Finish beating with an electronic mixer until completely cooled. The mixture should double in volume. Incorporate the sifted flour gently using a spatula, folding in the flour gently. Spread the mixture out on a baking sheet lined with parchment paper. Bake at 175C (350F) for about 15 minutes. Allow to cool.
FOR THE CREME MOUSSELINE:
250g of milk (8.8 ounces)
85g (3 ounces sugar) granulated sugar
50g egg yolks (roughly 2-3 yolks depending upon size of the egg)
35g (1/3 cup) of cornstarch
125g (8.45 Tablespoons) softened butter
1 vanilla bean
METHOD:
Whisk together the egg yolks, cornstarch and a splash of milk (reserve the rest for the pot)
In a medium-sized pot heat the milk, sugar and the vanilla bean paste until simmering, then slowly add the hot milk into the egg yolk mixture, whisking to combine. Then transfer it back into the pot, and heat on medium, whisking all the while until thickened. Allow to cool to room temperature before adding the butter.
Tips For the mousseline cream: when you incorporate the softened butter into the cooled cream, the two mixtures must be at the same temperature (room temperature). Thus the mixture will be done perfectly.
Add the softened room temperature butter, to the cooled pastry cream, and mix with an electric mixture for 2-3 minutes until light and fluffy. Set aside.
FOR CHANTILLY (Homemade whipped Cream)
2 cups (240ml) of heavy cream (creme entiere)
1 Tablespoon (8g) powdered sugar
1 teaspoon (5ml) of vanilla extract
METHOD:
Combine all ingredients in an electric mixer and whip on high until stiff peaks form.
TO ASSEMBLE:
800 grams (28 ounces) of strawberries
Whipped Cream (recipe above)
Whole Strawberries, cut in half with green tops intact (8-10)
Brisures de pralines rose or any other candied decoration
METHOD:
Cut out 2 circles of the cooled genoise cake with an 8-inch cake ring and set aside.
Place the 8-inch cake ring on top of cake board or cake stand. Fit the plastic cake collar inside, fasten with tape.
Slice the strawberries on the bottom to level them so they stand upright, assuring that each strawberry is roughly the same height. Then slice them in half, vertically.
Place the strawberries inside the cake ring, cut side facing out, all along the perimeter of the cake ring. Then place the genoise cake disk inside as a first layer.
Transfer the creme mouselike into a pastry bag fitted with a round tip. Pipe the cream in-between each strawberry, filling any gaps. Then pipe concentric rings of creme on the bottom, covering the cake. Add a layer of sliced strawberries, then another cake disk. Then another layer of piped concentric circles of creme, and more strawberries, and a final layer of creme.
Smooth off the top layer of creme with an offset spatula. Cover with plastic wrap and refrigerate for a minimum of 4 hours or overnight.
TO DECORATE: Transfer the whipped cream into a pastry bag fitted with a large star tip. Pipe dollops of star mounds on top of the cake, covering the surface. Slice strawberries in half, leaving the green tops for decoration and place them on each mound cut side facing up and slightly slanted, all the way around facing the same direction.
Optional: Top with candied rose petals, chocolate decorations, or candied pearls. Keep refrigerated until ready to serve.
To serve. Room the cake ring, and then the cake collar, and slice.

    We have pockets of areas in the USA where local growing and attention to detail and support of local growers is thriving but unfortunately the corporatization of our food supply is the core of the problem here. France is a much smaller country with a honorable and stubborn tradition of fighting back against corporatization and globalization of their food chains and I hope they can continue to do so!.     You are correct in your assessment of our food supply and of the huge differences between the size of our two countries. But is also cost and labour and how it affects the quality and production. I live in South Florida and vast amounts of farming areas have been sold to developers to accommodate the population growth, not only in housing but also infrastructure. With the exception of cranberries, citrus, and pome fruits (apples and pears), almost all other fruits and vegetables that are available in the supermarkets come from Central and South America, where unions are nonexistent and labor is cheap. Another situation is organic farming which uses more water than non-organic farming, but it can not meet the demand. It is about "supply and demand" and growing seasons which makes the quality of the product less than one would like. But I can not forget to say that PASSION is also involved and just as important, the French are known for their passion for presenting a quality end product as Beth pointed out.

    Farmers markets in France are organized by the cities. In most cities, you can find affordable high quality local food (produce, bread, cheese...). In the US a lot of the farmers markets are organized by private companies (like event organizers) who do that for profit. The booth fee can be so high and what's supposed to be a farmers market ends up being a fancy gathering of some farmers and crafters, where regular people can't afford anything.

    I have made this cake many times over the years but only I make it gluten free due to Celiac. It’s always such a beautiful and refreshing dessert to serve. The people of France seem to be so friendly and hospitable. It was so enjoyable to watch this chef in action. Great video.

    Oh Beth, I do not even have the mildest talent to make that gorgeous cake. I am so jealous that I'm not there to see Fred in person and devour that cake.     ​​​@@EntertainingWithBethI had a great time in Paris even though it was unusually hot for September. They're doing a lot of construction work fot the world rugby festival and for the Olympics. Buses didn't come and Metro was so hot. But hey, Paris will be always Paris!! Will go back after the Olympics when the city gets quiet.

    Oh yes that Château is one of my favorite little spots! The interiors (which you will see!) are completely recreated as it was, you have the sense of people in someone's private home that just stepped out! And the garden is fantastic too!

    The fraisier looked amazing. I'm surprised nobody has picked on the fact that Frédéric found Frédérique. 🤣😂 My aunt's best friend's name is Claude and so is her husband's. 😁 I grew up calling him Dédé and only learnt his actual name when they came to visit the US. Dédé hated American food, he tried some American birthday cake and was scandalized, he tossed it aside, calling it "étouffe-chrétien". 😁 I agree with him, pastries here are just a shortcut for diabetes.

Yes my husband thought the same thing when we would go to the kid's Bday parties here in the states and the parents would bring out these cakes loaded with frosting and food coloring and wonder "Why don't Americans have good cakes?!" I'd always laugh and say "but the kids love these types of cakes!" LOL!

    The berries were phenomenal! They tasted like strawberry-flavored lollipops! I've never tasted anything "natural" that almost tasted artificial because the flavor was so sweet and pronounced! It was so weird!

    We DO have amazing berries in the US. But you have to know where to get them...certainly not in a grocery store! The Pacific Northwest has delicious berries in early June. They are sweet, red all the way through, beautiful, and taste like strawberries. Come to Portland (Oregon) in the spring for some "real" strawberries! You want to try "Hood" berries (grown right here next to Mt Hood).

    I just made it 😊 I’m having special dinner guests tonight and I had bought strawberries to serve strawberries and cream as dessert but this obviously looked waaaay fancier so I made it and I can’t wait to cut into it tonight. I hope it sets in time. Quick note though, I think you meant 175C (350F) oven temp. I had the cake layer batter in for 15 mins at 175F and it was nowhere near done. I cranked the heat up to 350 for another 10 mins and it was done.

    I think one of the reasons why you would find American berries less flavorfull is that people in the US would typically put them in the fridge. The cold really ruins the flavor in fruit, especially berries. You have to leave them at room temperature. Same goes for tomatoes. Of course, that implies you have to buy them and eat them right away...

    That plus the fact they are picked when not quite ripe and then they spend days traveling to other parts of the country. The strawberries and blueberries that we pick fresh here are delicious! So full of flavor and, of course, perfectly ripe. They are quite early here and followed by peaches that melt in your mouth. It makes such a huge difference!

    Oh me and my French ha! What a journey it has been! I've been at it for about 20 years (NO ONE in my husband's family speaks a word of English, so that really was the best way to learn!) And yes the kids were raised bi-lingual; because I just couldn't put them through what I went through to learn ha!
