Beautiful recipe! Being Greek, I approve! May I suggest you start with the potatoes on the bottom layer instead of the eggplant? It holds a lot better that way.

😢😢 Watching you from Northern California and think of you often after hearing about Whiskey. Grief is a solitary journey that each of us travel at different times in our lives. It's a slow path and difficult to traverse at times, but somewhere at sometime, the dark clouds will slowly start to lift. God bless you, Joel. You are well loved and thought of.

As a Greek I endorse this recipe, Joel🏆 Some Moussaka versions leave out the potatoes for even more eggplants. There is also a Zucchini Moussaka variation but is less popular. Instead of a bechamel sauce one can use a Greek joghurt sauce with eggs, cheese etc. It's very light and originates in the Greek island of Thasos. Me and my family are very sad that Whiskey is gone😭💔

No butter, no cheese sauce and no meat. Tried a healthier version replacing cheese sauce with small dollops of cottage cheese, meat replaced with extra-firm crumbled tofu, chopped vegetables all sautéed together with EVOO, and a small square of dark chocolate into the tomato sauce to give it a deep richness & cut its bitterness! Assembled! Yummy😋 Would have LOVED your version when I was 30 years younger ☺️

My first taste of moussaka was in Corfu, Greece, at a restaurant on top of a hill overlooking the Mediterranean at sunset. I thought I was in heaven! Yours looks even better! And even though I'm mostly Keto now, I'm not leaving you, buddy! Best channel on YT. And Joel, the empty doorway says it all. I know you miss him. Praying you find peace. Your friend, Bill.

Τελειότητα! Α loved comfort food at the right time.. welcome back chef. In my greek family we dont boil the potatoes, we just frie them and we use them at the bottom, before the aubergines. It somehow makes the mousaka tower more steady and they keep some crunchiness. We also use cephalograviera or kefalotyri instead of parmesan.

Chef Joel, your pal Whiskey is going to be missed so much, such a good boy, remember all dogs go to Heaven it is so hard to let go, RIP big guy
