Thank you to Audible for sponsoring this video. Latest audiobook I listed to was called “The Language of Food: A Linguist Reads the Menu.”
During my trip to Vientiane, we decided to take a day trip to a small village called Ban Hatkai located right on the outskirts of Phou Khao Khouay National Bio-Diversity Conservation Area in Laos. The main goal of the trip was to visit the village and especially learn about local Lao Lum food (ລາວລຸ່ມ)
It was about a 2 hour drive to get there, and we stopped a few minutes outside of Vientiane first to visit a market and buy some ingredients. But the best thing about markets is that there’s always also some pre-cooked food available - and for breakfast in Laos, that means sticky rice and grilled meat! We got some quail and grilled dried buffalo lungs, both of which were delicious.
Ban Hatkhai - Ban Hatkai is a beautiful quiet village, and we arrived to the home, a beautiful wooden Laos traditional home. She immediately got started cooking, chopping all the vegetables and herbs, and steaming the sticky rice.
Koi paa - Lao fish mixed dish - For me this was the highlight of our meal. The fish was sliced thin, flash blanched, mixed with all sorts of fresh herbs, and toasted sticky rice powder, and seasoned with fish sauce.
Jaew - Any type of Lao dip - She made both an eggplant and a tomato jaew, both of which were delicious to eat with vegetables.
The best part of this meal and Lao food experience was all of us sitting down to eat together, sitting around a colorful spread of Lao food. The food was heavy on the vegetables and herbs, nutritious, and delicious.
Again, thank you to Audible for sponsoring this video.

No, Laotians don't eat dogs. That is one of the religious sins in our culture that prohibits us to eat certain animals. Vietnamese ppl who lived there and have their own villages around there mostly do sell and eat dogs. Not all Asians eat what others eat. Thank you

McChopper 2000 I think she was implying that Mark doesn’t sound fake about his sponsors. Some people come off extremely fake or as if they don’t use the product themselves, just trying to make a profit only. Mark seemed like he legitimately enjoyed this sponsor and even referenced his last audio book.

But I commend you for your bravery as I cannot bring myself to eat any kind of ‘filtering’ organ ( lungs, kidneys, liver, heart, intestines) but I thank you for the love and respect that you have for the people of Laos, Cambodia, Thailand, Vietnam… it shows in all of your videos from there. Correct me if I'm wrong, but one of the reasons why there is so much depth of flavor in these dishes is because it was cooked with wood. It has a signature that can't be replicated with charcoal fire or gas flame.

My treatment for me when I'm depressed is looking at your videos and recognising the simplicity that life can and should have. It's about watching the process of cooking and the simplicity of these people's lives and that being "good enough" not worried about career and money and possessions. And that's why I find it a beautiful reminder to myself, that to exist and do day to day things like cooking healthy meals for your family, is within itself therapy and what "life" should really be about xx

Fresh, healthy meal. Village looks peaceful. Thanks Mark. You take us to all these destinations and wet our appetite. Encouraging us to visit, or to learn other cultures and way of life. Also we learn to prepare meals in a different way. Thanks again.
