5個麵團,10個餅
中筋麵粉 250克
水 120克(半杯)
雞蛋1個(帶殼60克左右)
酵母 4克 (1小勺)
糖 15克(1大勺)
油酥:
小蔥 90克
小蘇打 3小撮
鹽 2~3克(1/2小勺)
中筋麵粉 80克
食用油 60克(熱)
recipe:
5 doughs, 10 pies
250g all-purpose flour
120g water (half a cup)
1 egg (about 60 grams with shell)
4 grams instant yeast (1 tsp)
15 grams of sugar (1 tablespoon)
Pastry:
90g shallot
Baking soda 3 pinches
2-3 grams of salt (1/2 tsp)
80g all-purpose flour
60g cooking oil (hot)

    今天試作了,真的非常容易。一開始麵糰比較黏手,我直接先放10分鐘再理它😅。煎好之後,皮酥內軟,味道比較清淡,麵皮微微甜味,油酥部分也不會鹹,可以加蛋,加辣椒醬,自己調味。直接吃,也很好吃。

    給你一個建議,怕就不要開大火,以小至中火去煎,一至兩分鐘看一下,直到覺得可翻面再繼續煎,就可完成了。

    Hello, for freeze then cook, it’s not suggested as there is fermentation involved, the yeast may be not active due to dehydration. As for some frozen food you see in supermarket can be cook in this way is because the industrial freezer have lower temperatures than family freezer, and they add antifreeze in the product, we don’t have both, so it’s not suggested to cook after freeze❤️❤️🥰🥰 However, cook then freeze is okay 👍.     您好,做好的生麵團不建議冷凍保存,因為自己做麵包不放添加劑來防凍,無法保證酵母的活性。第二個原因,家庭冰箱達不到快速製冷到零下三十多度的商業冷凍冰櫃。 您可以完全把餅或者麵包做好以後密封放入冰箱冷凍保存,這樣可以保存很長時間。

    您好,冬天用和手溫差不多不超過38度的溫水,夏天用室温水就可以。

    您好,如果是做六個更容易換算一點。揉成三個麵劑子,每個對半切,就可以做成六個了。同時,所有的配料按原總量的60%算,用同樣的方法做就可以了👍👍👍❤️❤️
