Kyoto Chishin - Blacksmith

KYONOKAJI YOSHISADA, a blacksmith workshop for Kyoto cutlery, is located in one of the factories in Kumiyama-cho, Kyoto Prefecture. Founded 360 years ago, the head of the family has used the name "YOSHISADA" for generations.
The main character this time, TEIICHIRO YAMAGUCHI, is the 10th generation. Our ancestors were Swordsmith, and both Yamaguchi and his handmade knives carry on that tradition.
First, the base metal heated at a high temperature is joined with the steel, and then hammered repeatedly with a hammer to forge it to approximate the shape of the knife.
Next, the original form of the knife is smeared with mud, heated again at a high temperature, and cooled rapidly. Quenching is the process of making knives hard and sharp.
After that, it is sharpened with a grinder or natural whetstone.
In addition to cooking knives, we also handle special knives made by craftsmen who support the traditional crafts of Kyoto, as well as hatchets and knives for outdoor use.
Yamaguchi is currently 85 years old. The single-minded desire to improve and the spirit of craftsmanship will never fade.
