Kutsinta

Kutsinta is a popular rice cake made with rice flour or all purpose flour, water, sugar and lihia (lye water) and served with freshly grated coconut. The distinctive rubbery/chewy texture of the kutsinta is due to the addition of lihia. This tutorial is a remake of the kutsinta video which I featured in our Caro and Marie Facebook page. This new video has more variations.
Chef's Note:
1.) Remove for 3 seconds the cover of the steamer after steaming for 5 minutes so that the top of the kutsinta is shiny.
2.) Boil the water in the steamer and then lower the heat to simmering when you put in the kutsinta. This step is to eliminate or minimize the centers of the kutsinta from dimpling (sunken center) during the steaming process. If the center sinks, it will not alter the taste. You can fill/cover it up with the grated coconut when serving.

    Hi Chef Rose. I love watching your videos. I notice when you steam, you also put a cloth at the bottom of the steamer, not just on the lid.

    You are correct! Because sometimes you put too much water that when it boils, it goes to the molds.

    Pwede naman but it is too heavy. Cassava starch is better.

    Lihia is lye water which is used to make the texture of the kutsinta rubbery. Yes we sell it in the store. Thank you for watching.

    Sorry for the late reply. Do not forget to wipe the molds with cooking oil before filling them so the kutsinta will be easy to remove once they are cooked. Thank you for watching!

    No ma'am. You can use cassava starch if you do not have tapioca starch but not glutinous rice flour.

    Lihia is lye water or sodium hydroxide. It makes the lihia the characteristic chewy and rubbery texture.

    Did you put a cloth on the cover so that the steam will not fall on the kutsinta when you steamed it? Or maybe kulang pa sa luto or possibly you made a mistake in measuring. Either one of those scenarios could be the culprit.

    Baka nagkamali ka sa measurement nang ingredients mo. The maximum time maluto ang kutsinta is 25 minutes. Did you remember to put a towel before putting on the cover of the steamer so the steam will not drip down the kutsinta? I think luto na ang kutsinta mo, hindi mo lang na pansin kasi may tubig sa ibabaw nang kutsinta from the steam. Aside from those possible scenarios, I can not think of any other reason bakit matagal maluto ang kutsinta mo. Can you try again?
