【Korean Food】 Spicy Beef Soup (육개장 = YukGaeJang)

Main Ingredients:
* 8 oz Beef (Brisket)
* 3~4 Green Onions
* 1½ Handfuls Mung Bean Sprouts
* 1 Handful Dried Fernbrake (1½ Cups Soaked Fernbrake)
* 1 Handful Dried Taro Stems (1 Cup Soaked Taro Stems)
* ½ Onion
* 1 Egg
Beef Broth Ingredients:
* 10½ Cups Water (2½ Liter)
* 5 Garlic Cloves
* 2 Green Onions
* ½ Onion
* 7 Black Pepper Corns
Sauce Ingredients:
* 3½ Tbsp Red Pepper Powder
* 3 Tbsp Hot Pepper Oil
* 3 Tbsp Soup Soy Sauce
* 1½ Tbsp Sesame Oil
* 1½ Tbsp Minced Garlic
* 1/8 tsp Black Pepper
* 1 tsp Sea Salt
Yield: About 6 Servings

    I LOVE this soup. I eat at least a bowl every other day. After the first time i decided to make it with chicken stock instead of water. It filled in the "something is missing" feeling. It added a great dimention to the broth. Also I tried it with thicker pieces of stew meat and added cabbage in the final cooking. It was Awsome. Thank you so much for this recipie

    A favorite dish of mines. Very compelling melancholic song choice....without your voice-over narration this would almost be like a sad movie about a mother tearfully making her lost child's favorite dish. It ends with the soup bowl steaming near a window followed by a closeup of her watery eyes looking out towards the sunset.

    I tried this at a Korean restaurant the other week. Most Asian food I've had is rarely spicy even when I'm told it is but this one sure surprised me and my mouth. This is def. the way to go if you want spicy Asian food!

    I made this today but the next time I make it I will follow your recipe. I didn't let the ingredients sit for 20 minutes after coating in the sauce nor did I fry it for 5 minutes before adding the broth. I think doing this will make the soup taste even better! :) TY for your video.

    @PootieKrumpz you can use oyster mushroom...or cooked spinach.. cabbage.. napa cabbage... some vegetables that have some texture as I mentioned..

    @bumthology Yes.. it's like chinese chilli oil.. you can get from a Korean or Asian grocery store.. or.. you can make it at home also.. just fry some red pepper powder in cooking oil.. that's hot pepper oil.. ^^

    yes.. you can fry some hot pepper powder in cooking oil to make hot pepper oil.. not too high temperature though..

    @cletus2580 oh.. really.. actually I've never tried sprouts with vinegar. and pickled.. interesting.. typical sprout side-dish in Korea is.. just boiled and mixed with other ingredients..and the ingredients will be salt.. garlic.. sesame oil..sesame seeds.. and green onions.. :D

    chilli paste and powder taste different.. so you can use the paste..but it will get a little different flavor. The oil give good flavor too.

    Found all the korean ingredients i needed at Hyun Dai asian grocery in Antioch TN. Because I was short on time I used the prepared fernbrake in the refrigerated section. My dish turned out great!!!! I cut the soup soy to 2tbs and the sea salt to 1/4 tsp because I am salt sensitive-I could't tell any difference

    @LegendaryGoldDragon I think Taro is a kind of root. They are native to Asia in general and not just Korea, and is the size of a Yam from the supermarkets i go to.

    @gaelicscots there are different types of pepper powder and chilli powder.. so hard to tell which one you mean.. if you can get something from Korean grocery store.. you will be sure to use right one..

    @ThNostalgia If you use chicken with skin and bone.. it will give your broth good flavor.. just use same amount will fine.. ^^

    i dont have red pepper powder but i have paprika powder and red pepper paste..which one is better substitute?and i never seen dried fernbrake before can i change it with fresh fernbrake?seems like i have that thing around my house xd..thank you

    I almost forgot the soup I tried also has some very thin vermicelli type noodle not sure what that was called, oyster mushroom would be very good in this soup they shred nicely in strips when you pull them apart, would you fry these first, as they would have a pleasant nutty taste if you did? The enokitake mushroom is nice too, I would add both!!

    yes.. you can use that..it's easier to use since it's already soaked in water.. just remove the water and wash them good..and use.. ^^

    You can eat the soup and rice separately with sides. or you can mix the rice in the soup and eat with sides.. no correct way.. just eat the way you want.. ;) it matches great with kimchi..

    Hi Aeris, i ate some of the restaurant cooked this soup which the beef some is tender but some is too hard, is it anyway to cook the beef tender? Or is it because of different part of beef have different result?

    There is Korean eatery here in Az ( Mesa) that makes this dish. It is my fav.,my boyfriend and I love it. Is there a "correct" way to eat the soup and the sides that ate served with it?At this place they serve the soup with rice and other side dishes.

I've never tried Korean soup with tongue before.. sorry.. if you have chance to try it again, can you ask the Korean restaurant what the name is ?? :)
