Daniel shows you how to make one of Korea's beloved stews... Yukgaejang! This is rated medium difficulty, as it involves a few more steps than usual. But if you're up for a challenge, try making this stew in the winter. It'll chase away colds... and also bolster your confidence with Korean cooking. it's interesting to see the different ways ppl learn to make yukgaejang. i use my own recipe, which is based on like 3 different recipes. my friend uses her mom's which is completely different, and i sometimes add my grandma's twist to it by using oxtail and 무 which also tastes amazing XD in the end (whatever your variation), i think yukgaejang is one of the best soups ever, and it's definitely one of my faves ^^

Oh my, that looks so delicious! The taro stems are enjoyed quite often here in Hawaii, in a dish called laulau, which also includes the taro leaves. Now I know what I’m making this weekend! Yum!

I was first exposed to yukkaejang at the Korean Snack Bar on the back end of Camp Casey when I was stationed there in 2003. It's still one of my favorite stews along with Kalbi Tang and several others

Thank you for the videos! I’ve tried some of them, very easy to follow. Could you make a video explaining the different soy sauces, how to used them and maybe how to identify them? I hv stores that sell many different kinds but dont know the difference and some don’t have English words to know the differences.

Omg Daniel, after all those gochugaru u put it in... I cant imagine how hot !!! From my experience... yuk gae Jang wasn't that spicy after all... (that's what I use to try over here in nyc...) but I'll love to try the hotter version of it!! Cant wait!! Thanks again Daniel!!!

Whoa I have ferns growing crazy wild in my backyard! I will check if they are the edible ones. Yes they do get woody as they get bigger so I see you picked the new fronds. Winter here now, so I will have to wait til spring.

I live in Ontario Canada,, near to Niagara Falls! Maybe you heard of that place lol. Ferns love the cooler weather and shade, and just take over the garden if you let them.

Dan yul, when you and your parents pick the ferns, did you use those ferns fresh? Can you use fresh the taro stems too? How to use if these two ingredients are fresh?
Yukgaejang is still my #1 fav. What other 2 can compare for that top spot? Gamjatang and doenjang jigae are pretty ok but can't even compare imo!

Yeah we rarely eat fernbrake in the US, I doubt the majority if Americans even know what it looks like in the wild, or even what to do with it. First time I ever had it was in bibimbap.😅
My favorite of Korean food is yukejang, if I landed in Korea for transfer to next flight, I always bought this menu in international inchoen airport... I tried to made one time by recipe from Korean chanel in fB but the taste doesn’t similar like what I eat in Inchon airport 😥 ... well I’ll try once again with your recipe

The gosari I got is green and soft... So wasn't dried first? Do I just use it the same way?
저는 궁금해요... Is 대파 seasonal or available year-long in Korea? H-Mart Chicago-area only has 대파 a few weeks each year. The rest of the time, the stores sell pencil-thin 파. I love 육개장 in wintertime.
The restaurants I go to also add egg to this, like in egg drop.

Damn, that looked gooooooddd!!! Shame we're coming in to summer and the local Korean Mart has closed down - just when I discovered it, too! *sobs* Okay, quick Q? What is the difference between soup soy sauce and normal soy sauce? We get really thin soy and also a thick mushroom soy over here, so I'm wondering if that is the difference, one is thin and one is thicker/more substantial?

Oh and thanks for the tip for the chili oil. I have a HUGE bag of gotchugaru so that will be what I'll make with some of it.

Unless you work at a restaurant i don't think you have to separate all the veggies. When i make this i usually just use a big bowl to mix the veggies before adding into the soup

You can leave out. I tried making with different recipe and got the soaked gosari in the package and didn't like the smell.

Oh you like soondae?! To make sundae from scratch would be next level... haha but there a few recipes you can make with store-bought sundae... like spicy stir-fried sundae (순대볶음) 😋

This is the first 육개장 I've seen that isn't smothered with bean sprouts. I hate bean sprouts and it's one of the ingredients in every Korean soup and stew 🤦♀️
I see asian people picking those ferns all the time and people thought they were crazy until the farmers market started selling the baby fern crooks for a small fortune and then they became the new trendy veggie for hipsters to over pay for.
