Η αγαπημένη κολοκυθοτυρόπιτα της Γιαγιάς Ελένης, το φύλλο το άνοιγε μόνη της, παχύ, χωριάτικο και τραγανό. Το χειμώνα στο χωριό χρησιμοποιούσαν τα πράσινα κολοκύθια με τη σκληρή φλούδα που είχαν αποθηκεύσει το φθινόπωρο, καθώς άντεχαν και διατηρούσαν εσωτερικά τη μαλακιά ψίχα. Συνήθως τα κολοκυθάκια συλλέγονται όταν είναι ακόμα μικρά, μαλακά και βρώσιμα, αλλά μερικές φορές είτε ξεχνούσαν να τα μαζέψουν, είτε αφήναν μερικά επίτηδες να σκληρύνουν, για να τα διατηρήσουν και να τα χρησιμοποιήσουν κατά τη διάρκεια του χειμώνα.
Φτιάχνοντας αυτήν την παραδοσιακή κολοκυθόπιτα με χοντρό φυλλό και μετά ενα ταξίδι στα βουνά για ένα γλυκό παραδοσιακό γλυκό, με μέλι... σε ένα μικρό χωριό δίπλα στο τζάκι είναι το μόνο που χρειάζεται κανείς μια βροχερή μέρα.
Grandma Eleni's favorite zucchini cheese pie, she opened the fyllo herself, thick, rustic and crispy. During winter in the village women used the green zucchinis with the hard skin which they had stored in the fall, as they could withstand and preserve for some months, the soft crumb inside.
Usually zucchinis are harvested when their immature seeds and epicarp (skin) are still soft and edible but sometimes they forgot to harvest them or leave some on purpose to harden, in order to preserve & use them during winter. Making this Greek traditional zucchini pie with thick phyllo dough and then travelling at a small village in the mountains for a sweet traditional dessert, with honey ...is all you can ask for a rainy day.

    Hello. Thank you so much for sharing the recipe. It looks really delicious. I never think zucchini can look this amazing. I'm sure it's so rich & savory with all the cheese in it. Too bad I can't find ready to use phyllo dough here, there's only spring roll skin. I don't think it will create the same taste & texture.
