He's preserving his right hand for the daggers LOL. Kidding aside, it's fundamental to block with your left when your opponent shoots with your right. It gives you the maximum amount of reach and shortest amount of time to get to the ball. And when you land, you are still facing your opponent. Imagine blocking a right handed lay up with your right hand. You twist mid air and most likely land with your back against your opponent. Not an optimal position defensively speaking, if that opponent has regained possession.

Optimal reach, optimal angle, and least amount of time to get to that ball and swat it. Given that the majority of players are right handed, or in this video here, the majority here has shot the ball with their right hand. So lefty block it is! Also, the angle/squaring up your opponent is key. As he blocks with his left hand, he lands in a manner that he's still squared up to defend the opponent in case they regain possession. Blocking a right handed lay up with your right hand would put your back facing your opponent as you land, therefore putting you in a disadvantageous position if opponent regains position and goes for a follow up attempt.

Fundamental. Most players shoot with their right. Using your left hand to block gives you more reach, if not better angle, and puts your body square up against your opponent. Going with your right hand, you go off angle. More chances of initiating contact therefore a foul. And in the event your opponent still gets the ball, you're too off angle to go for another block. Blocking with your left hand keeps you squared up, even as you land you're still in a dominant position to guard your opponent. Well, that's the fundamental, but of course it's not absolute. But by seeing how Kobe maximized it here, it would be wise to follow the same habit. Be a lefty blocker.
