You know Jared, that middle section is almost heart-shaped. If the kitty litter doesn't work, figure out a way to put a point at the bottom and a little bit in the upper part to make it a true heart and then your pond is a "Deep in the Heart of Texas" and you can tell people that you meant it to be that way.

Jared this may help with the algae in the pond and it's free. Put a 1/2 of a coffee can of wood ash in the pond. If blocks the u.v from the sun and safe for the animals.

Without even watching the video I can say YES, kitty litter will indeed seal a pond. Now there is a MUCH MUCH cheaper way to do it. Cat litter, especially cheap clay cat litter is made from bentonite. Bentonite is used for drilling mud and also a product known as "HOLE PLUG". As the name suggests it will plug up a hole and prevent fluid loss. You live in Texas, there are probably a million drilling supply companies that would've sold you 100#s of bentonite for around $4-$10. Also, in the future if you do another pond or a especially a larger one..... bentonite is the standard for pond bottoms in Sandy areas and there are even how much do you calcutors online to figure out how much you need based on the soil type and size of pond.

I noticed that the pond is a lot deeper in the center. Looks like there is a small drop off. So I'm wondering if some of the problem could be that the shallow areas around the pond just evaporate faster. Wonder if adding to the depth of the pond would help.

I watched the video and it looks great but if it does not work for a long period of time keep your eyes open for an above ground pool on the curb and cut the bottom to size. Most people buy these yearly and toss in the fall.

That must be a large Texas. Next suggestion would be a huge piece of thick plastic . It's cheaper than liner and will last for years. I salvaged some from a dried up pond left from the gas well drillers. I know how frustrating it can be but your pond looks great.
