    I was screaming when you cut anchovy half! I'm not korean but I love korean food. I never cut my anchovy half, I only take the black stuff inside if it or called guts. Nice cooking.

    +Chef Julie Yoon I love Korean food, but I have never had this dish. When we lived in California, we ate Korean all the time, but since moving out to Arizona it is hard to find any Korean restaurant at all, much less a really good one :-( but your recipes have me thinking I am going to make it at home :-)

    It's called a Ddukbaegi. It's an earthenware pot. You can find them at most Korean grocery stores in their home section.

    I really want to try those but I cannot handle really hot food but I do like food that has good spice because I do spice my food a lot but I cannot eat real hot food because of my stomach but you can’t make this without the red chili peppers flakes can you that’s what I’m trying to ask and if you do can I go to like a teaspoon or a half a teaspoon because I am it’s not gonna be any good if I don’t put the spices in right but I can’t eat it if it’s too hot either so I feel like it’s a catch 22 please help

    You can add Gochujang but it will lend to a different flavor. Might not be bad, but just different. Instead of fish sauce, just use salt and a pinch of sugar, or soup soy sauce (soy sauce made specifically for soup).

    I'm making soodubu jjigae at 2.03am after watching this video 😌 but i have few questions 1. Can i use gochujang instead of gochugaru? Whats the different between the two? 2. Why is my soondubu jjigae's colour is not as red as yours? Mine is like brown-red.

    Gochujang and Gochugaru are different things. Watch our Korean ingredients guide video to see the difference: kzread.info/dash/bejne/nap9o7dsna-6kZs.html If you add Gochujang to this soup, it's going to have a different taste. The red color is based on how red my Gochugaru was in the first place (and how spicy you make it). It also depends on how dark brown your fish sauce is, and how much you add.

    I also wanted to ask I noticed that they sell the anchovies in a very big bag can you freeze them what you don’t use & I also wanted to ask if you don’t use the whole package of tofu can you put it back in the refrigerator and how long will it stay good because I can’t eat that much I’ve had quite a few stomach surgeries so I’m just trying to get an idea before I buy these items because I’m gonna go to Gainesville Florida I don’t live far from there and there’s quite a few Asian stores so I can get what I need but I’m trying to get any kind of idea also about how to make this without it being real hot like spicy hot but I still want it nice and spicy I hope that makes sense I want a good space how about that & i’m sorry one more question I’m going to buy a small amount of kimchi because I’ve never tried it at the Asian store how long can I keep it in the refrigerator if anyone knows any of these answers please let me know I would appreciate it

    Yes you can freeze anchovies indefinitely! Tofu can probably last 2 to 3 days in the fridge after opening. Kimchi can keep for months in the fridge but it will continue to ferment and get more sour which makes it even more tasty for stews. Remember to use a clean utensil when scooping the tofu and kimchi for use!

    Hi Chef Julie. I am not sure if I could find enoki mushrooms. Do you have a substitute for it? Or can I cook Kimchi stew without it? Thanks😁

    Sorry for the late reply but you can totally make this stew without the enoki mushrooms. It doesn't affect the taste much...it's more of a nice garnish to eat the stew with...and adds a satisfying texture to the otherwise soft stew.

    do they sell kimchi juice by itself? I find that when I buy small batches of kimchi and i take the juice i feel like i don't leave enough in the jar ... any tips?

    No they don't, but that would be a great idea. Yeah unfortunately there's nothing I can tell you to make more juice. I usually get the bigger jars and there will be more juice in there.

    Hi I'm sorry I missed your comment, but you probably bought kimchi that didn't have time to ripen. If I need kimchi to ripen faster, that's what I do...leave it out for about a day, and then refrigerate and let time make it more ripe and sour. I hope you were able to figure it out!

    It's different. It doesn't have a strong fishy seafood taste like store-bought seafood would have. But if you're in a pinch, I bet you could use store bought stock and just add the other ingredients to it and it would still turn out good....maybe just slightly different in flavor. I've used chicken broth as a base for my Korean soups when I was too busy or tired to deal with making my own stocks.

    +Petite Poulette That's fish sauce... and I should also let you know that different brands of fish sauce are different colors, so some are lighter. It usually can be used in place of soy sauce in a dish, or for dressings. I have a dressing recipe coming up using it soon! ;)

    Unlike a cast iron, no you don't need to pre-season it. But if you buy a stone pot that literally looks like gray stone, you do have to be careful how you wash it... usually without soap because it will absorb that flavor. But the kind I have/ use is like any normal pot.

    +DeJane' Walker I haven't made my own kimchi by myself yet, but maybe one day I'll finally buckle down and do it! I don't know about adding additional greens to kimchi... haven't heard of that before.

    Hmm...you could definitely still make it, but I'd try to replace the fish sauce with an ingredient that still has a nice salty and slightly sweet bite. The fish sauce really adds that pop of complex flavor.

    +Mich L You can make the same broth using just kelp, Korean radish, and dried shitake mushrooms (all sold at the Korean market). It will have a slightly different taste, but it will still be rich and delicious!

    It will taste slightly different because anchovies and fish sauce adds so much unique flavor, but you can use dried shitake mushrooms for the broth and Korean soup soy sauce or salt for the seasoning. It won't be exactly the same but it will still taste good.

    +babbiie7 What an interesting question! Honestly, since we visited Korea last summer and stayed there for over a month, I realized I probably could live there... but I would miss a lot of elements of America too... just because it's familiar and it's what I'm used to.

    In Korean it's dubu ! Chinese is doufu Japanese is tofu Korean radish is called Mu (무) ! 🇰🇷🖖🎎😄

    For the stock, omit the anchovies, use dried shitake mushrooms instead, and cook everything the same. For the fish sauce, omit it and use salt or soup soy sauce. It's soy sauce designed specifically for soup that they sell at the Korean market.

    Yes you can. And in fact, in Korean restaurants, they give you a choice of pork, beef, or even mushrooms.

    Hi Julie! I just subscribed! Just wondering how long could the hard seaweed thingy last? I bought it a year ago but wonder if I should chuck it? I think I need to have those anchovies if I want the real thing😂 and if I bought the kimchi and it says expires in June, do I really need to chuck it too? Just bought one and don't think I can finish it in time....and it had happened thrice😭 thks! Loved this video!

    Sorry for the late reply but my dashi usually lasts a long time... probably longer than a year... not sure how often you should replace it, but as long as it looks the same as when you bought it, I think it should be okay. Kimchi....even really old kimchi can usually be utilized as long as it's cooked. Some recipes require super old kimchi on purpose because of the rich sour taste! Cooking always makes it milder anyhow.

    If use whole fish with head, the stock has more rich flavor but head contains bitterness and bad taste or smell. Use both (head or non-head) and choose what you like.

    Spice itself can come from gochugaru, Korean hot pepper flakes, but the ripe kimchi adds more of a slightly salty and sour taste which I think really enhances the soup...so without the kimchi, it might taste a little different, or not as rich.

    You can, and that will give you some of the taste and texture, but again, it won't have that certain zing of flavor that sour ripe fermented kimchi gives you. Once it's ripe and you cook with it, the flavor gets more mellow and it transforms.

    You can, but the broth will have a weaker taste. You might have to substitute by adding more of the other ingredients, or more fish sauce at the end.

    Oh my... that's why you gotta gently stir the tofu when you add it in so it doesn't stick to the bottom of the pot... yikes!

    No it doesn't...at least not to me. It might have a hint of it, but it's not the main flavoring.
