Ingredients:
• 3 lbs beef shank, cut into bite-sized pieces
• 3 lbs pork ribs, cut into individual pieces
• 1 cup Khmer Kroeung spice paste
• 4 slices of galangal (cooked along with kroeung)
• 4 kaffir lime leaves (cooked along with kroeung)
• 16 cups water
• 2 tablespoons vegetable oil
• 2 cups Thai round/green eggplant, diced
• 4 cups celery, cut into pieces
• 3 cups chayote, cut into pieces
• 3 tablespoons + 1 teaspoon tamarind soup mix
• 3 tablespoons + 1 teaspoon chicken seasoning
• 3 tablespoons fish sauce
• 1 1/2 tablespoons sugar
4 jalapeno
• 2 teaspoons salt
• 1 cup Thai basil (or holy basil)
• Fresh coriander leaves, morning glory, chopped (optional)
Instructions:
1. In a large pot, heat the vegetable oil over medium heat. Add the Khmer Kroeung spice paste, sliced galangal, and kaffir lime leaves. Cook for 2-3 minutes, stirring constantly.
2. Add the beef and pork ribs to the pot and stir until the meat is browned on all sides.
3. Add the water, tamarind soup mix, chicken seasoning, fish sauce, sugar, and salt to the pot. Stir well and bring to a boil.
4. Reduce the heat to low and simmer for 1hour and 20minutes.
5. Add the diced eggplant, celery, and chayote to the pot and continue to simmer for an additional 10 minutes or until the vegetables are cooked through.
6. Add the Thai basil and stir well.
7. Serve hot with fresh coriander leaves and morning glory if desired. Enjoy!
This recipe makes a large batch of stew that can serve 8-10 people. You can adjust the amount of spice paste and other seasonings according to your taste preferences. You can also add other vegetables like carrots or potatoes to the stew if you like. Enjoy!

    Prahok is such a key ingredient to this soup, especially in Khmer cuisine. I’ve been seeing a number of recipes eliminating prahok which I understand non ethnic Khmer people do not have a taste for, but it’s disheartening to see because inevitably this is how a dish overtime loses its authenticity. It’s like replacing galangal with ginger to make kroeung.

    Absolutely! You can use just beef, pork, or tripe, the dish will still turn out delicious.
