Conor could not let the Artem slap slip because of his Ego, by very public association a slap on Artem is a very public slap on him. He can not let this slide and he had to make it very public in front of everybody cameras rolling so that his public image is not tarnished. His txt to Dana said as much "Sorry to everyone who was hurt, had to be done" no regrets. If He really cared only about Artem he would have waited for Khabib outside the hotel or in car park with noone to stop them and no one could get hurt and settled this beef there
