In this video I demonstrate how I like to make kettle corn in my five gallon jambalaya pot from Cajun Classic cookware. #kettlecorn #popcorn #sweetpopcorn #cajunclassic
I learned to use a cup of corn oil, a cup of sugar, and a cup of kernels, from watching Jaxx Drink water make this in this video:

Excellent job Big Lew and Thank you for the shout out my brother. I've never tried adding the sugar like you did. I need to give that a go and see if anything is different on my end. Thanks again brother and have a great weekend.

As you may know, I’ve been practicing this kettle corn for a few weeks now. It maybe because my equipment was a bit different, you used a discada,, I used a 5 gallon jambalaya pot. However, when I waited til a third of the corn was was popped I didn’t get as even a coating and I had much more of those sugar clumps (rock candy). If I let the sugar melt a bit before adding the corn I wound up with caremel corn at best and a burned sticky mess at worst. I have to get the oil hot first that’s why I had the three test pieces, then add the sugar. This method of adding the sugar just a few seconds before the corn gave me the best coating on the corn and easier clean up of the cast iron kettle because most of the sugar was on the corn and not remaining stuck to the bottom of the pot. I appreciate you watching and your inspirational kettle corn video. It was only your video that had the right ratio of corn, oil and sugar. Some had too little or too much sugar, or corn or oil. That little sugar piece I showed at the end was the only little bit of extra sugar I had.

Well I looked this up for you. It seems to be an Australian butter flavored popcorn salt. It even spells flavor with a “u”. www.gfresh.com.au/product/popcorn-salt/ Popcorn salt is just powdered salt, you can make it your self by putting table salt in a bender, or using a spice or salt grinder on the finest setting. Table salt and certainly more coarse grain salt doesn’t stick to popcorn. But if it is powdered (ground real fine) it stays on. Various flavors can be added to the powdered salt. Movie Theaters in Australia don’t use yellow butter flavored popcorn salt?

Very entertaining. If I could watch this every week I might stop watching NASCAR. Lol. I like seeing you use that big kettle. Maybe some high heat would be helpful?? That one cup of corn kernels sure makes a lot of popcorn. Nicely Done. Thanks for sharing. 😎.

  • @BigLewBBQ

Maybe the heat could be a bit higher, I have been practicing with this for about a month or so. When the heat is too high the sugar gets real dark and burns the popcorn. The kettle is also difficult to clean. Looking for a pale yellow colored coating on the popcorn. Somewhere between an off white and a buff color. I’m trying to make kettle corn not Cracker Jack. Thanks for watching Gringo. Glad you enjoyed the video. This is fun to make. The cast iron kettle weighs thirty-eight pounds!
