I Don't Sugar Coat (Recipe Creator)
INGREDIENTS:
80g or 2/3 cup Vital Wheat Gluten
(I used 122g each of the VWG and Lupin)
90g or ½ + 1/3 cup Lupin Flour
10g or 2 tsp Salt
1g or ¼ tsp Xanthan Gum
1 large Egg, beaten
12ml or 1 tbsp Extra Virgin Olive Oil
88.7ml / 3oz / 96g Water
METHOD: For the best results please follow the tutorial provided in the video.
PLEASE NOTE: You are aiming for the dough consistency to be exactly like in the video...big, slightly sticky clumps. Difference in weight measurements may be due to the different brands we all use. I can't say how long to mix for, due to different mixing machines, except mix until your dough looks like mine when I remove it from the mixing bowl.

    To make spaghetti without a machine, my mum used to fold the rolled sheet into a tube, then cut off thin "slices". So much faster than the method you showed. x

    Thank you for your comment and great tip. The roll technique works great for normal pasta dough, however not so with keto dough, as it is just too sticky. Youre welcome to try it but i dont guarrantee the result lol

    Kinda wondered the same, at it was a good idea, but I think as kzread.info/dash/bejne/l6SI2KurkcKWnLA.html found at the start of the video it might collapse on itself. The one he made at the end of the video also using Lupin flour he was using a pasta maker also. Probably the most realistic way to do it if you are doing so a lot. Would love if it works w/o the manual pasta maker but they are not big to store and not expensive. Tell us if you try it successfully.

    Hello Ambur yes you can make lasagne noodles. Once dried place the sheets in boiling salted water for 30 seconds then assemble the lasagne. The oven time would be to melt the cheese. Please feel free check out the keto pasta playlist...there is a whole lot more 😊

    Cut the pasta like they do in Italy… roll half the sheet of dough toward the center by rolling from the end toward the center. Do that for the other half as well. Then when both sides meet, fold both sides together so it makes a long cylinder and then cut slices from the cylinder, nice and easy. That way you’re not tediously cutting long strips for each piece of pasta like you’re doing.

    Hi. I have other keto pasta recipes that I can cut this way. Plus I have since bought a pasta machine. Thos dough is too sticky to fold over. But thanks for trying to help :))

    @@CookwithMel1 The trick is to sprinkle a mild bit of oat fiber onto the pasta sheet, similar to how you put a bit of flour on normal pasta. This will let you roll it up no problem.

    Just wondering about the texture mine seem mushy do i have to knead it more or add more flour? Did not mind the taste it was good. Not sure if i did something wrong any advice would be appreciated thank you Sharon Thomas

    Hi Sharon, no it should not have been mushy. You would have needed to add more flour until it looked like mine. Not sure why this happens but other people have had the issue of the lupin flour being more or less dense than mine. Best way I can describe the texture is a soft pliable dough. I hope it goes well for you but please do let me know

    Heya Lisa. Thanks so much. Ok so mix it until it forms into big clumps exactly like in the video. Then stop the machine about 10 seconds after those clumps are formed. Its not really about how long you mix for but more that you get to the clumps stage...around 2 minutes is my guesstimate. Is that what you're asking?

    I need to try lupin flour. I wonder if it would work in a ck flour. My favorite noodle is similar. I got the recipe from the keto king. It didn't use the lupin though.

    Mel thank you for the recipe. It’s a game changer!!! Just a couple of questions. Can you freeze the pasta and then cook from frozen and secondly how long does it keep once made if not freezing and how shall I store it. Thank you again so much ♥️

    Hi Lisa youre welcome. If you want to cook it from frozen I would boil until it's flexible then strain. I only stored it in the freezer I didn't try keeping it in the cupboard. So I would recommend freezing and it will stay fresh for months :) If you prefer storing it in the cupboard like regular pasta, I would leave a few strips in an airtight container. As the pasta is dry it would do better than fresh pasta, but I haven't tested it myself. Every time I make it, it gets gobbled up lol

    @@gracie2244 yes but I don’t eat it on it’s own. Normally have it with meat bolagnaise so it masks it. But I like the texture so all good.

    For the vital wheat gluten please reconfirm the grams. I measured out 2/3 cup and it only weighed 77 grams and the same with the lupin flour

    I re-measured the vwg and the lupin and updated it. It is still different to yours but similar. Please follow your cup measurements even I Don't Sugar Coat seemed to get a different weight.

    Thank you for this recipe! Just fyi, 1 ml of water = 1 gram. So the recipe should call for 88.7, or 89 grams, of water. Every drop matters. I went over by 2 ml and my dough was a bit sticky , requiring some extra pinches of lupin flour. Will be cooking the first batch tonight. Can’t wait!! Love your channel.

    @@CookwithMel1 I actually used 10 mg less VWG because that was all I had and upped the lupin flour by 10g. I did find that it’s important to watch how much water is added. Even 1-2 ml can make a big difference! I’m thrilled to be able to make pasta. This is a total game changer!

    I'm italian and I LOVE my pasta, yet I'm now having to lower my carb intake now, is this the TASTIEST recipe. I see all kinds including a new one you have with cream cheese and I have a problem digesting cream cheese, I'm looking for the one that tastes as close to pasta as possible. Thanks. You also had a keto pasta that substituted cream cheese for water but I can't find that and would it taste more like pasta?

    Hello from Ireland! I made your pasta yesterday with Joe Duff's alfredo sauce, it was fantastic! I just want to ask if there was a mistake with the amount of water needed? I ended up using twice as much water as recommended. It might have been because of the different brands of lupin flour or gluten that I used. I also noticed that "I don't sugar coat" uses more water in her recipe than you do... Nevertheless I will definitely make this pasta again, it really is a game changer! And I will order a pasta maker since it took sooo long to cut the pasta, but it was still worth it! Thank you so much for this delicious recipe, I really appreciate all the work you put in it!

    Hello Polly lovely to meet you. Perhaps MY Lupin Flour is weird since you and I don't sugar coat needed more water lol. However that's the exact amount I used. What's important is the consistency of the dough, which should be exactly as in the video...sort of firm clumps. Firm so you are able to slice the noodle shape or perhaps run it through a pasta machine. I will certainly update the Ingredient List just in case others need more water as well. Thanks for the feedback I'm so glad you found a great solution. I love this pasta it's amazing. Also, I have done 4 pasta sauces in another video, some of them are like 2 net carbs and really good.

    Nice to meet you Colleen. I ordered one online and it hasn't arrived due to covid affecting delivery delays. I was going to try dusting it with oat fiber beforehand. If you try it please let me know how you get on. The dough is less sticky than other keto dough so it might be fine. I should do another video when I get my machine 😊

    @@jenniferstephens650 ah I thought so... I'm a little worried that xanthan gum would give the pasta a slimy after-taste, that's why I opted for Gelatin when creating it. I would try a half teaspoon instead of a whole one. Good luck!

    Thanks Deb. As far as taste goes no...Lupin flour is an acquired taste. The texture of this pasta I think is amazing. It's not the easiest to roll. I would say it's a good pasta recipe if Lupin is your favorite flour.

    Hi Judi. The measurements in the description box are from I Don't Sugar Coat. I ended up needing 122g of the vwg and lupin. It may be due to the difference in brands. If you do make it pse keep and eye on the texture. You are looking for a firm dough in big clumps like in the video.

    Hi Mel, I need your help pls just because in the video you mention to use 88ml water but in the recipe in the description box you wrote *96g water* ! What is the right amount of water for each 122g VWG and Lupin flour (there is also a little bit confusion about these amounts because you wrote different amounts of each in the description box *but* recommend that you use 122g of each!?!?) Edit: The dough is ready but I had to take more of the 88g of water which you mentioned in the video to get it together ... and I used a standmixer! I will take a picture for Instagram 😊

    Hi Ela. In the description box is mine and the recipe creator's measurement, I show they are different. I think you have done great as you have gone by the texture of the dough which is exactly what I do. That's why my water measurement is different to hers.

    How does this rate on glycemic index? Seems like it would spike insulin 😕 this may be low carb but not necessarily clean keto.

    Hello. Lupin Flour alone is low glycemic and it's the main ingredient. Vital Wheat Gluten ranks medium on the GI scale but also it's not the main ingredient. Our bodies are all different as well and that is a consideration. I would say this pasta is clean keto and also low glycemic therefore would not spike insulin. Hope that helps.

    Just a public service but there may be some who are allergic to lupin; most susceptible are those with a known peanut allergy as lupin is from the same legume family as peanuts. (My son is peanut ana; we haven’t even dared to try lupin out of fear. We do not look forward to the day we may have to use that epipen)

    If you use coconut flour your pasta will taste exactly like coconut! I didn’t like coconut pasta. I also tried this with Carbalose flour and it was awesome.

    To be honest I didn't try a 2 ingredient recipe with Lupin flour and egg. I do know that lupin flour performs very much like normal flour because it's just as fine in texture...so it would be an interesting exercises 😊

    I think the oil is so the mixture is not too dry and the xanthan gum is a binder. So if we use just the flour and eggs it will probably be dry and crumble. The salt would just be for flavor.

    Honestly, I like different things about them. The slight taste of lupin flour in this one is different to the taste of regular pasta and the other recipes. But in a sauce can't tell the difference. I like and use the pasta sheet recipe the most, because it's the quickest and I do all kinds of things with them, even as burger buns and bread lol. I know I'm not being very helpful here (sorry)...I would go with Ingredients I already have and regularly use, also if you do gluten or not. As my preference, it depends on what meal I'm making and if I have all the ingredients.

    @@CookwithMel1 thank you. That is helpful. Yes I saw your uses for sheet pasta video. I’ve not tried using lupin flour, but love lupini beans as a snack (snag them at any Mediterranean market). I like the baked spaghetti idea and am now craving it since watching this video!

    Hi Renata. I haven't tried that to be honest. I've only swapped out the lupin flour but I wasn't happy with the almond or coconut version.

    Update: just tried it with oat fibre. It's quite crumbly and I had to throw it away. I am testing out a version without Vital wheat gluten and if it's good I will show you guys.

    Just be aware that this recipe does not work in a "pasta machine" it is too hard and will not extrude. If you get your pasta maker you will realize this. Perhaps you can come up with a recipe for pasta that does work in a Pasta Maker.

    Lupin flour is highly allergenogenic and do contain toxic components. So I wouldn't recommend eating this on a regular basis.

    I dont have an issue when i eat it lots lol. But like you, i would not recommend it for Gluten intolerance or if one is allergic to Peanuts. You may like the keto pasta 2.0 recipe better if you're allergic as we give you 3 Gluten Free options.

    Asian people that make fresh noodles, roll op the dough and cut the small rolls in no time! Dough looks good but this is not the way to cut spaghetti. If you look on you tube how Asian people do it it is as quick as a pasta machine and you don,t need cleaning! If the dough cannot be folded, you can cut the dough in 4 slices and 4 spaghetti slices at one time .

    This is not fresh Asian noodles. This is the original recipe for a keto pasta sheet and is cut according to the consistency of the sheet....it is quite different. Thanks anyway
