I lived in Opelusas for a hot minute and went to USL in Lafayette back in the day. It was and probably still is "a little different". I don't know what was hotter the gumbo or them Creole women! BOTH were 🔥! Lol!

My gumbo has Shrimp, 3 kinds of sausage, chicken, oysters, lump crab meat, and crab legs, the gumbo itself is just like gravy for the meats and rice. If its not enough meat, i throw it away when its all gone.

I'm from Texas and moved to Opelusas (one of my high school buddies graduated from Southern U and moved there along with another hs buddy) from Miami (I was in the Air Force and was stationed there for 3.5 years). New Orleans to the core here! The best food in New Orleans is found at the home of a native or at a gas station. You will not find great food at any New Orleans restaurant nowadays. New Orleans' restaurant game is dead. The majority of the chefs are not from New Orleans anymore. Katrina. Katrina did it.
