    If you change the water after a few days, I would bet it would keep more than 5 days. Celery actually lasts much longer when wrapped in foil. I learned that from a farmer at the market... tried it, and it works! I like to make cucumber lemonaide.... i's the bomb.

    I take a celerystock, I slice a very thin are off the bottom where the roots grew……I put an inch of water in a jar, set the stalk in it….put it in the fridge and if you keep the water level constant…. It will last and be fresh for a month

    Water is mostly polluted with Florida and heavy metals? If you use this method use water without Florida and heavy metals.keep it 100

    He's right 👍🏾 the potatoes work. I learned accidentally. I was going to can some potatoes and got tired and stuck them in the fridge 😂 that went on days & even a couple of weeks. They were still white when I took them out and fresh. I did have a lot of starch in bottom of jar. Rinsed, boiled and my husband got mashed potatoes 🎉

    Love this! I like to do prep that makes extra to use later in the week. Now maybe they will last a little longer. I use water from drained off cooked veggies or canned goods as a topical fertilizer. Also leftover coffee. I would drink the carrot or celery water but use the onion or potato water in this way.

    I wish I could keep it longer than 5 days, but we eat a lot of vegetables and I have a lot of mason jars - so I think doing this with carrots and celery would be very helpful. I know that it works for potatoes because I actually discovered it myself one day when I cut a potato too soon and wanted to save it. In water, it lasts!

    You can always freeze them in air-tight containers or zip-lock bags if you want to keep them much longer.

    I also find that putting veggies like this in snack size zip lock bags gives you a perfect serving size for cooking. I just put them on the door of my freezer for easy access.

    I'll try it for carrots and cucumbers, looks easier than vacuum packing. For onions and potatoes I don't see the point unless you need to store leftovers, otherwise it's easier to keep them whole (and unpeeled) in a cloth/linen bag in the pantry.

    Hmmm. I never peel my ginger. I’ll definitely try the ginger water. This kinda like “fermenting” without the salt. Pre fermenting.

    Hi i got a capiscum/ pepper i never cut it up , because I only needed a half so i only cut it in half so shall i cut it up in slices / cubes and store or should i keep as is an only cut up as required

    My mom would always add salt to the water for cucumbers, carrots, and celery. It was a good trick to crisp up tired grocery store produce.

    Great video! Can you do this with peppers, too? I like to precut peppers for use in salads, etc, but they start to get mushy after 3 or 4 days.

    I'm confused. I read that u can keep chopped onion fresh for 5 + days in an airtight container. Someone asked, what about a jar & yes, it was airtight & better than plastic (for odor). So how come by adding water to the jar, suddenly u can't eat them unless u cook them? I only like raw onions, so I'm looking for a way to keep them that's handy & and they'll stay fresh.

    Change water weekly and veggies last longer, especially celery and carrots. Mine last a month!

    Thanks for this. Having worked in food prep, we often store many of the fresh veg this way, too! Just thought to share in case one ever needed to just peel a lot of ginger quickly, i’ve found the inside edge of a spoon to be quite fast and safe.

    Yes, true, once you store them in water, do not eat them raw out of the water, cook them, only eat fresh onion raw.

    It makes no sense why you cannot eat the raw onion stored in the jar of water, but you can eat the cucumber and the carrots. It seems the risk of bacterial contamination would be the same for all the vegetables you showed.

    My vegetables..th ones in urr presentation..last on my fridge longer than th 5 days u said th veg's in jars with water will last. Then th extra work..if they lasted a long time this would b helpful...com on man!

    They won't last long if you cut them, they only last long as whole. If you use half of potatoes and onion, the rest doesn't last long either. This is for cutting and making them ahead of time so they are ready to use whenever you need them.
