Ingredients
Cottage Cheese (Paneer) (Chaman) = 1 kg
Mustard Oil = 1 cup for frying and 2 table spoons for cooking
Ginger Powder ( Shounth) = ½ teaspoon
Ginger garlic paste (Dagith rohan te adrakh)= ½ teaspoon
Salt (Noon) = according to the taste
Fennel seed powder ( Beadiyaan) = 1.5 teaspoon
Turmeric (Leadir)= ½ teaspoon
Cumin (Zur) = 1 teaspoon
Cloves= 3 no.
Black cardamom (Beade Eale) = 1 no
Green cardamom (Sabz eale) = 5 no
Cinnamon ( Dalchini) = 1 no
Milk = ½ liter
Ghee = 1 teaspoon

How to avoid milk getting curdled after you add it. Normally if you add salt to milk and boil, it will definitely curdle. AKV

By saying THANDA PANI, please clarify , the water has to be at room temperature or chilled? And if we put fried paneer pieces into HOT WATER what can go wrong with paneer.? Sometimes paneer tends to go chewy and rubbery. Please give us some useful Tips to keep the paneer soft and tongue friendly. Thanda here means normal cold water not chilled. We put paneer in cold water to keenit fluffy. Paneer becomes chewy when we boil it way too much either in yellow water or in the curry. Whenever you cook paneer, always put it in the curry towards the end as it doesn't need much boiling. When we overcook or over boil paneer, it becomes rubbery.
