Karpatka | Polish Cream Puff Cake | Traditional Polish Dessert

Karpatka cake - an amazing Polish dessert that features a choux pastry base, dusted with powdered sugar. The uneven puffing of the pastry mirrors the rugged terrain of the Carpathian Mountains. Each baked choux pastry has its own distinctive pattern, making each cake so unique!
What you'll need:
For the crème pâtissière / pastry cream
2 large egg yolk
35g (2 3/4tbsp) Sugar + 35g (2 3/4tbsp) Sugar
20g/2tbsp/0.71oz Corn Starch
410g/410ml Milk
0.5g Salt
10g/2tsp Vanilla Paste/extract
For the Creme Mouselline / Enriched Pastry Cream
*Cooled Pastry Cream (the above)
120g/8tbsp unsalted butter
20g (4 3/4tsp) sugar
For the Choux Pastry:
110g (1/2cup)water
50g (3 1/2tbsp) unsalted butter
56g(4tbsp) All purpose flour
3 eggs
10g (3/4tbsp) sugar
Note:
* You may just use the crème pâtissière as the filling, or may add in the butter for an enriched cream
* Also feel free to customise this recipe by reducing the amount of cream for a thinner cake or by making a larger choux pastry for a more traditional size
* I always weighing my ingredients using a scale for accuracy, while I have included measurement in cups as well, hope that helps. (slight variation may occur)

I'm Polish and karpatka is absolutely my favourite dessert.

More like a giant eclair. The technology for preparing the cream and dough is very similar, the ingredients are the same, although the ratio is different

My thoughts exactly, though I would definitely put the giant sugar biscuit on top for that cracked appearance and authentic taste. Powdered sugar is just too weak.

I wish I had known about this when I was in Poland, I would've looked for a café so I could try this.
I'm half polish and this is even better than I remember from my childhood memories. another polish cake which is worth trying is Sękacz, which is a real challenge!

When baked, a top made of choux pastry acquires a wavy, irregular surface reminiscent of mountains - hence the name probably referring to the Carpathians. (Carpathians - mountains in Poland). Your cake looks perfect and I bet it tastes great. I've eaten this cake many times.

My aunt made this for my birthday once. Only difference: she put mixed berries on the top. I don't know if it was the best dessert I've ever eaten, but it's certainly in the top five. I still dream about it.

I grew up on my Babcias cooking, rarely cakes, we usually bought them ...paczki, rurki, black forest, ptys, sernik, ponchowe and numberless others I can't remember.

@@p.h.bridegroom4142Probably not, back in her time food was much simpler and her father was barely able to treat her mother to chocolate. She lived a century ago after all, a lot has changed very quickly. Instead, I make her things she may not have tried from Poland, which is more to show her I'm interested in her heritage, even though she doesn't consider herself to be Polish anymore. She has a sweet tooth, so good memories will be made regardless. :)

Od Karpat daleko, ale w Colorado tez mamy gory. Zawsze chcialam wiedziec jak zrobic karpatke. Dzieki za "krok po kroku" instrukcje. Teraz tylko musze zebrac odwage zeby sprobowac zrobic.

If your butter and custard do not combine, make sure the mixture is warm enough, i put the bowl in the oven after it had cooled down a bit from making the choux, and took it out every few minutes to stir them together, after a few rounds of that it had combined well. If you use this method, be careful not to heat it too much or the butter will seperate into whey and ghee and will not be good for creaming

Creme Mouselline is soooo much more superior to most American-style butter creams, it doesn't taste as greasy and heavy while eating, it is totally worth the time invested in making it! This recipe video is generally great, but for me worth it just for the creme part alone! :D

It takes around 1hr 30min - 2hrs excluding chilling time for the pastry cream. Hope this helps
