Kamado Joe "Dizzy Joe" Pineapple

Тәжірибелік нұсқаулар және стиль

It's time to pull out the Joetisserie once again and spin a pineapple that is sure to blow you away! All it takes is a nice fat pineapple, a quarter cup of orange juice, rum, and Grand Mariner (or Triple Sec), some brown sugar and cinnamon and you are on your way to a dessert treat that you won't soon forget!

I did this on my gasser since I don't have a Joetisserie for my classic and it game out great! Had it as a side to pulled pork that had been on the Kamado Joe for 15 hours. The Dizzy Pineapple is a perfect side for pork. Got a couple of special guests you want to give a treat before the meal just stop the spinning during the last 1/2 hour of cook and slice off a small piece. It is AMAZING while still super hot off the grill. John's video didn't say how long to let the brown sugar stay on the pineapple before cooking, but by freezing the video when John's watch was in the shot I was able to figure it was a couple of hours.

I've never been able to do this (pineapple) right. I usually end up with something that tastes like hot regular pineapple...which is sticky from the sugar but nothing special. I think the rotis/injection might be the difference for me. I've never thought of doing either before. I guess it's time to dust off the old cajun bandit rotis. Thanks for the video. Enjoyed it.

Looks great! About what temperature was your grill at during cooking?

Do you think coconut sugar (or coconut palm sugar) would work as well? (Coconut sugar (and cps) has a much lower Glycemic Index and is full of minerals but is still sweet though not as sweet as brown sugar or table sugar. It's my go-to sweetener instead of sugar.)

If you came out with a cookbook, i'd buy it instantly! (or even an iphone app?) But until then, your youtube channel has already been a great "cookbook" for me.

I wonder if you could core the pineapple and put it on a beer can chicken rack? I don't have the rotisserie for my BJ
