We love a Caeser salad all year round so Yotam's version with the tahini-caesar dressing really ticks our boxes for autumn. Sturdy kale is massaged to soften, tahini and yoghurt are added to the dressing for earthiness and zing and our Extra Good Thing - za'atar chickpeas is the crunchy snack you have been missing out on.
For a Little Extra, Test Kitchen manager Gitai is testing on Noor his (not) hummus skills with a quick butter bean dip.

    love this recipe. i gave it a vegan spin by subbing out the anchovies for a tapenade of capers and sun-dried tomatoes, plus vegan parm & yoghurt. it was perfect. love the addition of tahini in this version!

    Oh that salad! I made roasted chickpeas but Yotam's method is better. Love that dressing, I plan to use it on all vegetables salads.

    I am going to make this, the only change I will make is to wash my Kale in warm water for a second and dry it, which also makes the kale a little softer. Thanks for the recipe.

    I’m going to give this one a try, looks really fresh and good. I’m not a fan of anchovy so I’ll probably leave that out and hope it’s OK.

    This might be just the recipe to try if you don't like anchovies but of course, adjust to your taste.

    This is a REALLY good channel. Glad I stumbled into it. The chickpeas are fire. Be sure to make their butternut squash dish with the cheesy custard recipe. It is outstanding!

    What is the difference between using ka'tar chick peas to can organic or I like to cook dry chickpeas (store for later use)?

    These are already cooked chickpeas, we use 1 tin.

    Not entirely. The dressing is in OTK EGT as part of the 'Endive salad with maple walnuts and tahini-Parmesan dressing' (which is super delicious as well), the rest is new. We hope you like it!

    Do you soak the chickpeas for 6-8 hours and drain them before putting it in the oven?

    We use tinned chickpeas (easier and faster) but if you do want to use dry chickpeas you'll need to cook them first. Hope that's helpful.

    For this salad, you can substitute with croutons, butter beans, even broken up tofu. We hope that's helpful!
