INGREDIENTS
Chicken Shawarma
1 1/2 teaspoons ground cumin
1 1/2 teaspoons ground coriander
3/4 teaspoon smoked paprika
1/2 teaspoon ground turmeric
1 pinch ground cloves
1 1/2 tablespoons apple cider vinegar
1/4 cup (60 milliliters) extra-virgin olive oil, divided
1 pound (500 grams) boneless skinless chicken thighs, cut into 3 to 4 pieces each
1/4 cup (50 grams) full-fat Greek yogurt
Kosher salt and freshly ground black pepper, to taste
Toum
3 heads (100 grams) garlic cloves, well-dried and peeled
1 1/4 cups (300 milliliters, or 250 grams by weight) sunflower oil, or another neutral-tasting oil
3/4 cup (75 milliliters) freshly squeezed lemon juice

If you like garlic and you've never had toum, you are in for a unbelievable experience. It's one of those foods that I get a craving for and nothing else even comes close. It's so worth the effort, you won't regret it.
Add a couple of pieces of ice to the food processor as you blend your toum for extra-fluffy extra amazing toum, it keeps the temp down while you blend so that it doesn't split during the extra aeration.

Thank you for introducing me to TOUM!!! My whole family is addicted to it! Toum made eating natto pleasurable. For the natto consumers, you know what I mean ;)
Veganize idea: silk plain vegan soy yogurt in place of regular yogurt and grill extra firm tofu or seiten. Im so happy these ultra modern and creative hosts of this show always have Vegans/ Plant based eaters on their mind when sharing recipes.

Do you think Butternut or acorn squash would go good for another vegan option? I'm guessing it might have to be par cooked first , I don't know . I'm not vegan myself but I do cook for some , I'm not against having good vegetarian meals. I'm looking for some other options because along with my friend being vegan she is also a Celiac and allergic to Dairy, Soy, has some other new restrictions that I have not got to fully learned about yet. She is away with some family stuff for a while so I wanted to come up with some new menu options

Damn i really don't have any excuses now, i love shawarma wraps and i love toum so much that it's 75% of my diet, I just gotta start making this recipe this week.

To reply to my own comment: the TOUM is in the book, but not the chicken shawarma. I did make it and it is out of this world, but my toum was not thick, it was more like light cream texture. What did I do wrong? Pour oil too fast?

Is there a way to make toum if you don't have a food processor that you drizzle things into while it's on?

I think I’ve seen FoodWishes do it with a mortar and pestle, but if not that either chop it real fine or smash into a paste w/ a little salt and the side of the knife. Then use a whisk to slowly incorporate the oil. Probably won’t be as fluffy as a food processor but will do the job.

You might be able to use a blender if you don't mind deep cleaning it.

You can make it with a mortar and pestle but it won’t be as fluffy. Similar to an alioli. Or you can do it with a stick/immersion blender.
That's enough garlic to kill half the population of Cluj-Napoca ;)

I agree, I truly wish they would use spatulas instead. That noise makes me want to walk into the vlog and grab the spoon, exchanging it for a spatula.

Y’all need to show more food and less of the faces of the people.We couldn’t see any of the processing of the toum and directly the end result … what’s the point !
