Aaj Masala Kitchen Me Bana Rahe Hai Gobhi Ka Achar Recipe. Ek Bar Ghar Par try Keejiye Ye Tasty Recipe.

Ingredients:-
* Cauliflower (गोभी) - 500-600 grams
* Water (पानी)
* Salt (नमक) - 1 tsp
* Turmeric powder (हल्दी पाउडर) - 1/2 tsp
* Vinegar (सिरका/विनेगर ) - 1 tbsp
* Fennel seed (सौफ) - 1.5 tbsp
* Dry coriander seeds (सूखा साबुत धनिया) - 1 tbsp
* Cumin seeds (जीरा ) - 1 tsp
* Carom seeds (अजवाइन) - 1/2 tsp
* Fine Mustard seeds (सरसों) - 1/2 tsp
* Mustard seeds cracked/Rai Dal (राइ दाल) - 2 tbsp
* Nigella seeds (कलौंजी) - 1/2 tsp
* Black pepper ( काली मिर्च) - 20-25 pieces
* Mustard oil (तेल) - 100-125 grams
* Chili flakes (चिली फलैक्स) - 1/2 tsp
* Turmeric (हल्दी पाउडर) - 1/2 tsp
* Black Salt (काला नमक) - 1 tsp
* Salt (नमक) - 1 tsp
* Raw mango powder (अमचूर पाउडर) - 1 tsp
* Kashmiri Red Chili Powder (कश्मीरी लाल मिर्च पाउडर) - 2 tsp
* Sugar powder (चीनी पाउडर) - 1/2 tsp
* Vinegar (सिरका) - 2 tbsp
* Asafoetida (हींग) - 1/2 or less
RECIPE:
Take some Cauliflower. Chop it and wash it properly.
Put some water in a vessel and heat it. Put Salt, Turmeric Powder and Vinegar.
When water starts boiling, put the Cauliflower in it and boil it for a little.
Then put the Cauliflower in the strainer and let it for drying in the sunlight or you can dry it below the fan for 1-2 hours. Thereafter we will make the pickle.
Keep a pan on medium flame and put Fennel Seeds, Dry Whole Coriander Seeds, Cumin Seeds, Carom Seeds, Fine Mustard Seeds and roast them for a little then let them for cooling down.
Now in the pan, put Yellow Mustard Seeds then put Nigella Seeds and roast them. No need to crush them.
In the same pan, roast the Black Pepper then crush them coarsely and separately.
In a pan, put Mustard Oil and heat it then turn off the flame and let it to be cool down.
Now crush the spices and mix the Yellow Mustard Seeds and Nigella Seeds with the crushed spices.
Put some Chili Flakes in it and add some more spices like-Turmeric Powder, Black Salt, Salt,Mango Powder, Kashmiri Red Chili Powder and Powdered Sugar in the masala.
Now in the dry Cauliflower, put some Vinegar and put the ready masala as much required.
In the Lukewarm Mustard Oil put some Asafoetida then put the Oil in the Cauliflower and mix it.
Pickle is ready, Now keep it in the sunlight for 2-3 days in a fresh jar.
