客家蒸鹹雞 Steamed Chicken in Hakka Style

🟢材料
雞1隻
薑、蔥適量
紹興酒2湯匙
鹽 2茶匙
🟢做法:
1️⃣徹底清洗雞肉並去除內臟。將雞掛起來瀝乾水,大約30分鐘左右。
2️⃣ 用2茶匙鹽,2湯匙紹興酒和薑汁均勻地塗抹在雞肉裡外,將薑渣和蔥和薑放入雞腔中,醃製2個小時。
3️⃣用大火蒸雞15分鐘後轉中火蒸剩下的10分鐘,靜置5分鐘後才打開蓋子。

🟢Ingredients:
Chicken - 1
Ginger, Spring onions - as needed
Shaoxing wine - 2 tbsp
Salt - 2 tsp
🟢Cooking directions:
1️⃣Clean the chicken thoroughly and remove the internal organs. Hang the chicken to dry for about 30 minutes.
2️⃣ Mix 2 tsp salt, ginger juice and 2 tbsp Shaoxing wine spread evenly inside and outside of the chicken. Put the ginger residue and spring onions into the chicken cavity. Marinate for 2 hours.
3️⃣ Steam the chicken over high heat for 15 minutes, turn to medium heat for the remaining 10 minutes. Let it sit for 5 minutes before opening the lid.

教你做風干咸鸡:新鮮雞1只蒸熟之后才擦粗鹽,如果是冬天把雞放在北風當處吹1晚,夏天放在空調下也吹1晚第二天(隨便那天亦可)蒸熱食。絕對比什麼什麽雞都好吃。試吓啦!

由細到大都中意食雞,但最怕最怕斬雞時彈到通處都係😂
斬雞刀工一流,可以完整砌番隻雞型出來,犀利👍 我絕對支持帶手套煮食,又薑汁又鹽,實在太刺激皮膚!

Recipi bagus dan istimewah.. Bahan yg kamu miss out.. Bawang putih 5.biju tumbuk pecah bubuh dalam purut ayam.. Steam 30.minutes ,tutuo apu dan tutup tudung 30 minutes.. Masa ambil naik ,sapukan sedikit garam dan samsu beras di atas kulit atam, baru mula memotong makan.. Ok.. Gd job, Kam Sheah. !

整鸡在过年时的家宴上,真的是最重要的菜之一,另一道可能是一锅材料丰富的汤~现在一个人在外留学,两年多没回去了,因为疫情也不知道接下来什么时候能回去,看到这道菜很有感触。一个人在外面,最多只会买些鸡翅鸡腿自己煮,下次再能吃到整鸡的时候,应该就是回家了吧。您的视频非常治愈,我很喜欢,谢谢。

這是"有機穗香雞", 在百佳和一田百貨都有得買,雖然我冇收廣告費, 但我都推介, 因為覺得佢係冰鮮雞中比較好食和有雞味.
If only there was smellovision laugh out loud. I never knew a whole chicken could be steamed an the way you used that you flip over your cleaver and handled that ginger then squeezed the juice. I am 49 years old . I cant believe I've never seen this type of thing. Wow thanks for sharing.

Cooking the whole chicken is a common thing in some Asian cultures. But only done with organic & freshly butchered chicken though. The taste is very different & much better than store bought chicken

It is "hua tiao chiew花彫酒 "(Shao Hsing wine), one kind of Chinese wine which is fully match with chicken.

處理生的食物的砧板和熟食的砧板,應該是分開、不同的2個砧板吧,不可以用同一個

我家有4個砧板, 3個可處理熟肉, 只有一個切生肉, 3個切熟肉的是: 一個大型砧板處理沙律或麵食一類, 一個圓形實木砧板用來斬雞或處理用力切割的熟肉, , 還有一個長方形切一般較輕巧的熟食, 這個長方形的熟肉砧板跟生肉砧板相似但較為細小一些, 這條片拿了長方形輕巧砧板可能會令您誤會了, 而我切生肉和熟肉的砧板是分開擺放, 絕對不會用處理生肉的砧板切熟肉, 放心.
利害這隻雞。

The chicken in this video was bought from supermarket, it's organic chicken which slaughtered but not frozen. The frozen chicken can make this dish but the taste is not good. Thanks for watching!
