I've been trying the "Julie and Julia" game, I make a Julia Child recipe every Saturday night. Something I noticed pretty quickly is, that she focuses on building flavour through proper cooking and technique (and yes, lol, a lot of butter)...but, she seasons food sparingly. Unlike a lot of Chefs of today...I noticed right away, how much better my food tasted. She has a point, seasoning/herbs etc are great, but you want to taste the food as the main flavour with the seasoning as an accent and not the other way around. She's just freaking brilliant, I have always been a huge fan. Such an outstanding life she lived.

I made her butter poached chicken and my family went crazy for it! They said it was the best chicken they ever had. I also made her famous potato and leek soup for a luncheon and everyone was super impressed, like I did some amazing thing! I certainly didn't tell them I threw some potatoes and leeks in a pot of water, LOLOL! It came out smooth as silk and delicious and everyone said it tasted like something they would have in a 5-star restaurant.

I just love her passion and her focus. She’s not about the frills, fluff, and nonsense- she wants to make good food. And boy does she. And I love that she added lessons to all her cooking segments. Something like cutting an onion is something a lot of people don’t do right, or fast or with confidence. She’s the GOAT.

PS: (RIP) TO THE LATE JULIA CHILD, A TRUE COOKING PIONEER FROM THE 1960'S WHEN SHE BURST UPON THE TV PBS SCENE W/HER SHOW(NOW ON DVD) ENTITLED "THE FRENCH CHEF." IT'S HIGHLY RECOMMENDED FOR COOKING BEGINNERS, GRANTE SHE WAS SOMEWHAT SLOPPY IN HER COOKING TECHNIQUES, BUT NO MATTER. SHE WAS A COOKING LEGEND LARGELY RESPONSIBLE FOR TODAY'S FOOD NETWORK TV COOKING SHOWS & SHE LATER ON IN 1998-1999, MADE THE FAMOUS TV COOKING SHOW: "JULIA & JACQUES-COOKING AT HOME," ALSO ON DVD BASED ON THE BOOK OF THE SAME NAME. WATCH & ENJOY THIS DEAR LADY & QUEEN OF THE TV CHEFS. MAY SHE (RIP).

That chicken pipérade is the first Julia Child recipe I ever tried. It’s magical, much better than you’d expect from its ordinary ingredients. Something about the chicken and peppers develops a “communal flavor” as she puts it and it absolutely disappears at the table. Give that one a try for sure.
