these are my favorite kind of build orders, a clear precise build order to start with that can open into any strat after. that way i don't feel lost/inefficient on a new civ but can still play reactive

Against Jeanne D'arc it is preferable to play turtle-ish style so you don't feed Jeanne experience. 2tc/fc play seems to be the way to go :)

I feel as if a general guide against civs might be a good idea. To understand what to expect when you’re against them or help anticipate / make decisions earlier on based on the civ your playing against

The Jeanne D'arc variant loses a villager once she first ages up. Also, she spends most of her time building instead of gathering. Therefore, I think most of the time an opponent can justify building a scout right away. The end result is the same villager count while you may get more sheep and you can also use your 2 scouts to kill most of the wolves before Jeanne even ages up. You can also use those 2 scouts to kill at least one boar (although it's technically possible to have both boars killed before the 5-minute mark if you're willing to delay your age up.) The key, I think, is to delay her from getting to level 3 without overdoing it to the point that you are hurting yourself. I think in a few months most people will be saying that the Jeanne D'arc variant is one of the weaker variants.

but also maybe the most boring one to play against. to kill 2 boars, all wolves so only that jean can not, doesnt seem like fun. maybe rus is going to be strong against her, because they want to do that anyway. but as every other civ, its annoying. but jeah, i guess it is what it is.

I recommend adding a 6th gold vill once you have constant production on your archery, tc, SoC to slowly get upgrades :)
