I seen quite a few other vids of other chefs doing this but this one is a brilliant chef, he cut it so well done that there's barely any meat stuck at any point at all. The others one's i seen does a good job but not as good at this one as the others have a bit more flesh stuck to the fish. This chef here if he is slower than the others doing it is only a little bit if at all slower doing the cutting but far cleaner with a lot less flesh hanging onto the bones. Amazing work.

On top of flat fish like Halibut and Flounder tasting so good and being such a stable white fish the yield of meat to waste is higher than many fish but if you ever get it from a restaurant fried filet then always ask for dark side because look at this fish you get much larger filet from that upper portion.
