It tastes better than you believe at first. Its sweet tasting like once it melts into the roof of your mouth and then has the texture and consistency of sweet cream. That's the part that makes you enjoy it. It's so similar to butter that's why it's been used on top of dishes that can be enhanced with a cream like pasta, stuffed scallops in the shell, wagu beef strips, etc.

I loveee sea urchin, you can consider the texture as buttery, slightly grainy, smooth and slightly gamey but not slimey. It goes well with sushi or as sashimi, slightly salty, ocean taste, need just very minimal amounts of dipping into soy sauce. Please give this a try if you haven’t! Here in Asturias (north of Spain) we eat them too (we say them "oricios") and they are a bit smaller. In some restaurants they serve cooked and in others simply raw. For me their taste and texture is much better crude. But of course, japanese people always going a step further, preparing them with aesthetic skills and carefully. Here they go from fish box to plate most of the times. You break them in half with two forks and eat all what you find inside :D
