Using my own homemade meats to make an all-time crowd pleaser. #jambalaya #mardigras #cajun
Ingredients:
1-1/2 lbs chicken meat
1 lb shrimp
2 cups white rice
3 cups stock
1 cup diced stewed tomato(optional)
1/4 bacon or lardon
1/4 lb andouille sausage or other spicy smoked sausage
1/4 lb buckboard bacon(substitute smoked pork shank or ham)3/4 cup diced onion
3/4 cup diced onion
3/4 cup diced celery
3/4 cup diced bell pepper
2 cloves garlic
1 bay leaf
A few sprigs of fresh thyme
1 tbsp smoked paprika
1 tsp cayenne pepper
1 bunch green onions

cook the shrimp shells off with a little oil then deglaze the pan with the stock or some wine
nice jambalya, ingredients vary but the method makes it come out right, i do mine the same way. I keep saying I'm going to do a red jambalya one day and always chicken out. I've always made what's called a brown jambalya, or cajun jambalya, no tomatoes. I try to use smoked chicken thighs in mine with smoked sausage and sometimes shrimp. For quicker brown jambalya I cheat and use a cap or two each of kitchen bouquet and liquid pecan smoke. Red jambalya coming to my kitchen soon. :) We eat a lot of jambalya here.
