Italian Tiramisù | Kitchen on the Cliff with Giovanna Bellia LaMarca

Tiramisù is a modern Italian dessert that has taken the world by storm. In my version, I use the egg yolks to make Zabaglione, a delicious custard from Sicily which results in a delectable, silken smooth tiramisù.

Ingredients for Tiramisù:
1. MAKE COFFEE:
Make coffee in a 6-8 cup Italian Espresso Coffee Maker.
1 1/2 cups espresso coffee
Pour into a deep disk while still hot
Add 1/4 cup sugar, stir and set aside until cool
2. PREPARE ZABAGLIONE:
4 egg yolks
1/2 cup sugar
1/2 cup Marsala Wine
3. PREPARE FILLING:
Whisk the cooled Zabaglione with the Mascarpone and fold in the whipped cream (1 cup of cream) until well mixed and free of lumps.
4. ASSEBLY:
Savoiardi
Italian Espresso Coffee
Filling
Decoration:
- Traditional: Dust the top with Cocoa
- Place strips of candied orange peel in a pattern on top of the filling
- Red and Green candied cherries arranged on top of the filling in a pattern
EQUIPMENT
- Springform Pan, bottom removed
- Flat platter
- Small offset spatula

    Dear Peter, you made my day!!! My ties to Bronx Science have deep roots. I was the only Italian Immigrant child in my class of 1957, and then. in 1980 I introduced Italian and taught it for 2 years before they hired a teacher from Italy who taught Italian and Latin.     Turned out so good! I'm switching to this recipe. The zabaglione custard was fantastic! I made it the day prior. I ended up making my own candied cherries since I couldn't find any.

    Thanks Giovanna fir your version of Tiramisu. Over the years I've seen many versions, short cut versions and so on. The one I make, also consists of egg yolks and the cream, finger biscuits etc. Will be trying your version which I'm sure will also be delicious. 😊

    Tiramisu is my favorite dessert to make for invitations. The next time I will try to make it with Marsala wine. I always use Amaratto to put in the Mascarpone and on the Savordiadi. I don´t use heavy cream, I am only using 750 g Mascarpone and the 4 egg yolks with only 50 g sugar. I use Savordiadi which are already sugar coated. I am sure Giovannas version of Tiramisu is very tasty.

    Tiramisu' means "pick me up" and it does lift one in body and spirit! I like making it as a cake rather that spooning it out of a Pyrex baking dish for a beautiful presentation!

    i nned chocolate curls or cocoa on mine...never had cherries before - i think it needs a touch of chocolate bitterness not more sweetness in cherries.

    Thank you so much for this. I work in a hospital and made this for the nurse's break room. It was gone instantly. They didn't even slice it into pieces they ate right from the tray. One nurse, she ate about half of it herself! Those big gluttons!

    I made your recipe for Sicilian ravioli and pork ragu from Pasta Grannies yesteray and it is wonderful. I am anxious to have it again today. Thank you for sharing ad teaching me this dish. In my town there was a family from Sicily who had a take out restaurant for many years. We bought from them once a week. Sadly they retired and moved to be near their daughter. They did all the cooking theirself or had a family member from Sicily come to the US to assist. They had a green sauce I loved they said was made from Lima beans. Do you by chance know what this is called? I would like to find a recipe for it. I have searched and searched.

    I don't know of a green sauce made with lima beans, but, it may be another version of a puree of fresh fave which also makes a green sauce. Either one would be delicious. If you make it with lima beans use frozen baby lima beans. Sauté an onion in olive oil, add the beans (either one) stir fry for two minutes, add salt and pepper and just enough water to cover the beans. Bring to the boil, lower the heat and simmer for 45 minutes, then mash or puree with an immersion blender, add the cooked pasta, and simmer for 2 minutes. Serve with a drizzle of olive oil at the table.

    Is this filling very sweet? I have eaten Tiramisu in places before and the custard was not very sweet so it did not taste as much like a dessert. If it is not sweet, would it work well to add extra sugar perhaps in the whipped cream? Thank you so much for a wonderful video.

    Dear Judy, the filling is sweet, but it's also very flavorful because I make it with Zabaglione which, even all by itself is a jewel of Sicilian Cooking!

    I have a question about the recipe, Giovanna. I noticed that you did not mention if you added sugar to the panna. Do you add sugar? Also, I always add sugar to the panna but I do the caffe senza zucchero since i savoiardi I get have sugar on them. Should I add sugar to the coffee and take it out of the panna?     Dear Tina, I never add sugar to panna, in any recipe, because it's already sweet by nature, but I've always added sugar to the coffee to keep the balance of sweetness between the coffee and the Savoiardi. Either way is fine, just personal preference. I've never understood why people make tiramisú in a pyrex baking dish, and then spoon it out, when a cake is so much more elegant to look at and to serve.

    It's simple: fill the bottom with water, place the funnel in the pot, and FILL it even with the top. Then, screw on the top portion of the espresso pot!
