Italian Peach Cookies (Pesche Dolci) from Cookies Cupcakes and Cardio

In this video my mother in-law joins us to make some traditional Italian cookies called “pesche dolci” in Italy otherwise known as Italian peach cookies.
Cookie Ingredients:
1 1/4 cups sugar
1/2 cup butter
3 eggs
3 1/2 cups flour
1/4 teaspoon salt
1 lemon- zest only
1/2 an orange- zest only
2 tablespoons whiskey or milk
Cookie Dough Procedure:
Preheat oven to 350F.
In a large bowl, whisk eggs and sugar together until the mixture is fluffy and thick. You can use a hand held, or stand mixer.
Soften the butter in the microwave for 10 seconds and add to the bowl and continue to whip until it is fully incorporated.
Add the lemon and orange zests and mix.
Add the salt, and a half of a cup of flour at a time into the cookie dough until the batter is smooth. If the dough is too dry, you can add the liquor if needed.
Taking a small amount of dough (tablespoon worth) and mold over an oiled walnut shell. Place on to a parchment lined baking tray.
Bake in the preheated oven for 20 minutes. When the 20 minutes are up, switch the oven to a low Broil, and gently brown the tops of the cookies (about 2 minutes)
Allow to cool completely, and trim edges if necessary using a sharp knife.
Pair up similar sized halves and set aside until ready to assemble.
Cookie Assembly Ingredients:
Peach Schnapps
Sambuca
granulated sugar
red and yellow food colouring
Chocolate and vanilla pudding
Cookie Assembly Procedure:
In a small bowl, fill it up the the Peach Schnapps, and add yellow colouring. In a separate small bowl, fill it up with Sambuca and mix in red colouring. In a third bowl, fill it with granulated sugar.
Fill once half (one cookie) with vanilla pudding, and the other half with chocolate pudding. Press them together to form a peach.
Dip half of the peach into the red colouring, and then the other half into the yellow colouring. Roll entire cookie in sugar, and then place cookie into a cupcake liner.
Serve when desired. These are best consumed within 2-3 days.

My grandmother is Italian and a few years ago she taught me how to make many of her recipes. She fussed at me a lot and told me I was doing it wrong all the time! Haha! I think it's just the Italian grandmother way! Loved this and I loved how sweet you are with your mother in law!

Jen, ignore the negative comments. I can tell your MIL's first language isn't English and that she has no clue about the internet, let alone a computer. It is much easier for someone my age to use a computer, I'm 21 btw. you both did a fantastic job on this. You guys should do more recipes together, your MIL deserves credit too for sharing a recipe of hers! This looks yummy! Do you have any Italian heritage?

Oh God i read all of these comments about this video being painful! My nonna from Italy reminds me on her, always trying so hard to speak in English which for an elderly person is really difficult, and we all enjoyed it and had lots of laughs for the way she spoke. She used to laugh along with us but altogether we appriciated her efforts! And I think both Giuseppina and Jen were ABSOLUTELY FABOLOUS!

Well done Giuseppina! I think she did a wonderful job. My Nana is British, so speaks English fluently and always has. To start with I genuinely don't think my Nana would ever agree to be in an online video because she just doesn't understand how the internet works, much less agree to share one of her family recipes with what could potentially be the whole world. Italian grandmothers are so precise and severe when it comes to their recipes, I know it very well! ;) Pesche dolci, or simply pesche like I call them, were my favourite "pastarella" when I was a little girl! The only difference is that my grandma used to soak them in Alchermes, a pink liquor!

Awwww I absolutely love this!!! My grandma was Irish and we used to bake a lot. When I was younger I would get a little impatient with her because I didn't know the language. Then I asked her to teach me and I learned. She passed away several years ago but I still have memories of her. I think its those little moments that really count. Its about what they shared with you and what you can pass on to others, whether it be your own kids or in your case Jen, the world. I watch your channel all the time and I must say that this is one of my favorites. Regardless of what others say I think you shared a very personal and special moment with your mother in law. You both did great and don't let others bring you down. :)

No she spoke english as well but it was hard to understand because she had a heavy accent. When she met my grandpa she was living in Dublin. Im not sure where she grew up though. My grandpa was scottish so his Gaelic was different from hers but somehow they seemed to merge the 2 together and was able to speak fluently together. I guess after being married for 30+ years will do that. Lol. My sister and I are not fluent by any means. It wasnt practiced as much in our house. I wish it was though. It took me forever to learn it and then when my grandparents passed away we stopped speaking it. I can still remember some of what they taught us and I am working to refine my skills that way I can pass it on to my kids and my neices.

It is a hard language to keep up especially if you are not speaking or hearing it all the time! I used to be very fluent but then when I left school I didn't get to speak it as much. Nowadays I listen to the Irish speaking news channels here to keep my ear in..lol

Lol I know what you mean. I have a few fav. KZread channels that I listen to. Even though the dialects or accents may differ. Julie Fowlis is my absolute favorite scottish singer and TG Lurgan has quite a few popular (english) songs that theyve done in gaeilge. I am learning to read and write the language which is a whole different story right there...:)

I love this video. I cherish my cooking with my grandmother. When we cook together it is almost always her recipes. I listen and watch and help. I pay very close attention. I learn so much from her. I don't consider it a pain when she is telling or showing me the correct way to make her recipes. They are what she learned from her mother and grandmother. For generations this is the way it has been taught. It is a very special privilege and a great honour to learn from her. I appreciate you sharing your family and family secret recipe with all of us. I'm italian but I live in england and it's a pleasure listen to your mother in law speaks with this beautiful very strong italian accent! I don't have such a strong accent at all, but it's really fascinating for me listen to this sweet lady. Merry Christmas!
A magical presentation with your dear mother in law. My mom in law is Swiss and she speaks only a few words of English. Like you I have always appreciated the culture, traditions and food of my husband's homeland and dearly love his parents. It is amazing how well we communicate without sharing the same language. Loved this! Typical Italian momma nitpicking so that you do your absolute best! Reminds me of all the time I spent in the kitchen with my Italian Grandmother. You were so patient with her and you can tell that she sees you as her daughter, not daughter in law. Once you marry Italian, you are Italian ;)

I saw it! I have one of my own and his name is Herbie. He is so cute and hides in the weirdest places. He actually filled up my pottery bowl from Bowls 4 Hunger put dog food in it and left a note saying "Yuck! Don't give these to Santa!" It was so cute!

no I didnt get that, jen knows what WE look for in her videos and why we watch, her videos have a real tv like consistency, and jen was helping her out because her mother in law probably knows a little english and this is a recipe from her heart.

OMG!! Your mother in law reminds me of my Godmother! There is always a very specific way things should be done in an Italian or Sicilian kitchen. We are lucky women. You because you have such an amazing mother in law from Italy to teach you the way it's done there and me because I have a Sicilian Godmother to do the same!

Am I the only one who gets awkward trying to listen to someone who doesn't speak English try? I feel like the video would have been better if she just spoke Italian and the video had subtitles.

My grandmother is Italian, and although English is her first language she acts a lot like your mother in law. My nana and I used to make homemade pastas and desserts when I was younger so your video made me remember and miss her, but in a good way. Merry Christmas :)
