Today we have a cookie recipe for you all and this cookie looks like a real Peach fruit. These are Peach Cookies!!
It is a classic Italian pastry. They are soft and crumbly sugar cookies stuffed with a delicious filling which can be made either from jam or nutella or whipped cream.
These turned out to be the cutest and the most delicious cookies That i have ever had and were rather easy to make
so let's see how to make these Italian peach cookies
Ingredients
Cookie Dough
1. All Purpose Flour - 250gms
2. Powdered Sugar - ½ cup
3. Egg - 1 large
4. Melted Butter - ½ cup (100gms)
5. Baking Powder - 1.5 tsp
6. Milk - 2 tbsp
7. Vanilla Extract - 1 tsp
8. Salt - 1 pinch
9. Lemon Zest - 1 tbsp
Cookie Filling
1. Apricot Jam - ½ cup
2. Reserved Cookie Crumbs - ½ cup
3. Crushed/Ground Walnuts - ¼ cup
Decoration
1. Apple Juice - ½ cup
2. Fine Sugar - ½ cup
3. Red Food Colour
4. Yellow Food Colour
5. Mint Leaves
Preparation
Step 1 - Bake the Cookies
1. Combine All Purpose Flour, Baking Powder and Salt in a bowl and set aside.
2. In a separate bowl, whisk together egg and powdered sugar until creamy.
3. Add in melted butter and whisk again.
4. Add in lemon zest, vanilla extract, some milk and whisk again.
5. Incorporate the dry ingredients in small batches into this and whisk it until it is all well combined.
6. If the dough is a bit sticky, add some more flour to it and combine it.
7. Take out small portions of the dough (about an inch), roll it and flatten it slightly.
8. Place it on a baking tray lined with parchment paper.
9. Repeat the same with the rest of the dough.
10. Preheat the oven to 180 degree centigrade and bake the cookies for about 14 to 15 minutes or until the cookie base turns slightly brown.
11. Remove from the oven and place the cookies on a wire rack.
Step 2 - Cookie Filling
1. Once the cookies have cooled down, use a small knife to make a hole in the center of the cookie. Be careful while doing this, else the cookie might tend to break.
2. Take these cookie pieces and crumble them into fine crumbs.
3. Add some ground/crushed walnuts to this and mix well.
4. Add some apricot or peach jam to this and combine until you get a smooth filling.
5. Transfer this jam mixture into a piping bag so that it is easy to fill the cookies.
6. Take each cookie and fill the center with this jam filling. Repeat the same procedure with all the cookies.
Step 3 - Garnish Cookies
1. Pour Apple juice into 2 bowls.
2. Add yellow food colour to 1 bowl and red food colour to the 2nd one.
3. Mix well until the colour gets dissolved.
4. Now take each cookie. Dip half the cookie in yellow colour and 3/4th of the remaining cookie in the red colour.
5. Now coat the cookies with fine sugar.
6. Repeat the same with each of the cookies.
7. Finally garnish with mint leaves.
The Peach Cookies are ready to be served. You can store them in an airtight container for upto a week.

    Apple juice would give it a little tangy flavour. But if you do not have it, you could use water
