POLENTA with TOMATO MUSHROOM SAUCE:
2 cups Polenta (cornmeal)
6 cups Water + 2 tsp Salt, or to taste
1 Onion, chopped
3-4 cloves Garlic, minced
16 oz Mushrooms, sliced
1 qt Tomato Sauce, unseasoned
2 tsp Oregano, approx.
2 tsp Dried Basil, approx.
Olive Oil
Grated Pecorino Romano Cheese
Salt & Pepper to taste

Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.
Does Gina read the comments?

    Many older Italians relate this food to being poor, if you will. But when I was a child and one of my Nonnas or my mother made this, we would lose our minds! It was better than mac & cheese ANY DAY. We made it, and pretty much all her recipes, the same, except for the mushrooms, we kids didn't like them back then. Now, I make it for my kids and grandkids.     This presentation has an amazing ability to remove me from the place and even, the person, I am, and transport me to a place I’ve never been, and a time in which I never lived. Old New York, turn of the century, when people came here to do their best, and they transformed the entire city, by doing just that. So we are reminded of that time from the “simple” recipe for which we are greatly blessed, and we love this woman who reminds us of what we truly have to be grateful for, when people came and completely transformed America.     My family has a big polenta party. We cover a table with heavy duty foil and pour the polenta down the middle. We cover it with meat and mushroom sauce and put meatballs down the center. We play a game and the person who gets to the meatball first wins. But you have to start from the outside and eat your way in. The kids always loved these parties and I remember my aunt who is only 4’10” tall had to stand on a chair to stir the big pot.

    My mother and my aunts used to make a big pan of polenta in a big copper pot...they took turns stirring. Then they put it on a wooden board and would slice with a butcher string Then we added our sauce...they made different types but usually a meat gravy...added our grated cheese...my mouth is watering! Nonna Gina you are a blessing and I love your singing...God bless you❤️

    What a sweetie, She just lightens my heart and puts a smile on my face. With this recipe I got this picture when she was spooning out the polenta that this was something that has been done for years in her family. That is one of the things that is such a gift watching her cook... you can just picture her in Italy with her family, her mother and grandmother cooking.

    And may I add: also a VERY SMART family too - for having thought to made these wonderful treasures - each vid is a treasure. And hard working - cause vids are not easy to make and upload etc (yet it is hard to understand that as a viewer when the vids are well done - my husband made vids for a couple years, so I saw first hand what is involved). Gena's family - THANK YOU FOR THESE GEMS. MY MOM SPOKE English like Gena - we came here in 1960 from Poland. She had the stamina to cook like this too, to the end - which simply amazed me (it would tire me out just watching her at times!🌞). I LOVED making kruschiki with her - we made probably nearly a thousand at a time. She would be the one rolling out the dough, which I was always so grateful, as I needed to watch her to learn how to do that part and rolling I found harder then than I do now.. CHERISHED MEMORIES. Sometines when I watch Gena (hope I remembered the correct spelling), I cry - but GOOD tears - because watching G puts me back in the kitchen with my mom in 3D in living color - THANK YOU for that - that is a WONDERFUL from you to viewers, especially because my mom was shy about being filmed (she WAS comfortable with photos and voice recordings though, thank heaven). Learning to cook or bzke from videos to me is priceless - my fav way to learn it.

    What can be said about nonagina she's a treasure that reminds me of my mother and my grandma. there were times especially during the holidays when my grandmother would make the whole family get together and make traditional dishes. I still have the recipes from that past time when they both passed away on me very young. My grandma used to sing while she cooked and danced she was just such a wonderful person I miss her I miss her terribly. But watching Gina in the kitchen cooking with those wonderful hands she has reminds me of my grandma's hands they look alike they worked hard love hard and cooked everything under the sun that tasted good. So thank you Nona for your time for your strength for your patience. I will pray that you stay with us for a long long time to come and I hope that you and your family are together for many years to come. Thank you for all your wonderful recipes.     This is especially heartwarming because my precious mother made Polenta for us as kids, and we had it the old country style. It was served on the kitchen table because we didn't have a large board. But my mother would spread it out using a spoon then she made indentations throughout the polenta to hold the gravy....as kids we called them canals. Then depending what you had, meat, beans, veggies or a combination of each, my mother would pour the gravy over the polenta and then put the additional items on top.....we all had a spoon and we sectioned off our portion and began eating....most often I couldn't finish mine so it was saved the rest for leftovers the following day. Polenta is one of my all time favorites and I get cravings for it. So, I keep a nice stash of cornmeal in my pantry. Oh how I wish I had photos to look back on, but we just didn't think about taking photos. I am the eldest of 5 kids as well and looked forward to the leftovers as well. God bless you Gina!

    I remember stories that Grandma would pour hers out on her board, and it was like a loaf of bread when cool. Then she cut slices of it with a string as she went around the table for each plate.

    This makes me think fondly of my adopted Grandmother in Federal Hill RI who has gone on to the Heavens .. Nona is lovingly feeding everyone there now . She always made her Supper early we’re talking before school even started . There was always a big plate ready for us to have later , we’d run down to her house and see what a good meal we would have waiting . 😋

    My Mother was from Naples Italy and Gina’s accent, songs and receipts are authentic italian dishes. I grew up eating and cooking these dishes which I have passed down to my brothers and sons. It touches my heart to watch these videos.

    I just LOVE you-- Everything you make, reminds me of ALL the wonderful meals my grandmother, aunts amd mother would make for families. We are mostly Sicilians, and you could be MY sister, I just turned 94 and continue to cook the way I was taught--by watching, and NO cookbooks! I remember my mom giving me and sister a knife and telling us to go out and look for dandelions for our meals.. aah, the memories YOU stir up, I have watched since you started, You are to be cherished !

    I grew up with Cornmeal Mush. You cook it on the stove, put in a dish in the frig, then slice and fry in butter and serve with maple syrup. Then a few years ago I was looking for something else and found Polenta...fancy Cornmeal Mush. :)

    I remember polenta parties at my grandparents house... grandpa used to use a long wooden rolling pin to stir the corn meal... grandma would pour it onto a big wooden board & cover it with sauce and cheese. Everyone would take a fork and eat it right off the board. When everyone was done eating, they would all look at what was left and try to see if it looked like something... usually it was Africa, south America, sometimes we even made Italy! Happy memories! Thank you for that!

    There were ten of us, 5 girls and 5 boys. We had no chairs and only a few plates, so we took turns at the table, standing while we ate. The youngest went first, 3 at a time, then the next oldest until we came to the oldest 2. Mother washed the plates for the next group to come until all of us had been fed. Many days and nights it was corn meal gravy made with bacon grease, corn meal, and water , for our breakfast, lunch, and supper {dinner for all you northerners). I understand corn meal as a staple, because I had so much of the gravy while growing up, trying to just survive. God bless you Miss Gina. Take care and stay safe.

    After the rains my dad and his buddies would go mushroom hunting they would bring them home and my mom would clean them up and they would fry them and eat them as if they were steak. Very great memory revisited with your latest video.

    At last , POLENTA .I LOVE IT .I Believe you it is so good After the war , my grandpa used to go by train to the Siculorum , a mountain region in Transsylvania and bring cornmeal that was precious like GOLD I like your father's song and your voice .You ARE in tune dear Gina You passed on the traditions of your beautiful big family to yours.Oh, yes polenta is good the next morning too 😉

    I love you so much Gina!! I'm going to look for polenta now and make it if I can find it in the lockdown!! My family loves your recipes and me too. I adore your old-fashioned slow way of cooking, Mamma Mia!! And now that the virus has forced us all to slow down, I hope the people will appreciate your way of doing things, the real authentic and slow way. All by hand and so healthy and delicious. I hope people will stop rushing around doing stupid stuff that doesn't matter and is all about greed and selfishness. You show us what is important - family, patience, paying attention, taking your time, love, health - and the people can understand that better when things are taken away from them like they are at the moment. I think humanity will learn from this crisis, as you remember they did from the war and the poverty that came after. Thank you so much for sharing your wisdom and joy.     Delicious 😋 My Papa used to make the polenta with slices of home made salami, onions and fennel seeds. It was a very nourishing heart warming meal for cold winters xxx

    You remind me of very loving memories of when I was a small child cooking in my grandma Bambina's kitchen. She didnt speak English and she and I would sing together, and I didnt speak Italian, and so we both would sing in our own language, yet I could understand her.. she was the most loving person in my life, and I miss her dearly. So, watching you, brought tears to my eyes.. your family is blessed to have you..

    I think it’s an Italian thing, I have the same memories of my grandmother and my great grandmother (everyone called nonna, meaning grandmother though she was my great grandmother ). The gnocchi one made literally cried.

    I simply adore you. You remind me so much of my mom and the recipes she use to make. Thank you for sharing so many of your delicious recipes. My mom too, immigrated from Italy in 1947. Your accent is so much like my mom. I understand everything you say and how you say it. I love the fact you use your hands when you are cooking, just like my mom and grandma!     She is so charming. Her recipes and instructions are so practical and her personality is so warm and welcoming. I am an American woman who retired to Calabria Italy, Santa Domenica Talao, 2 years ago because I love the Italian people, the food, and the culture. I love that she is producing these videos and preserving not only recipes but Italian culture. Grazie!

    Nona Gina you bring such comfort and joy to me!! I just got home. rom a major surgery..but i always watch you sing and cook and got me thru the few days I had to spend in the hospital!! I would give anything to sit at your dinner table!! Ciao Bella Nona Gina!!
