Cannelloni made with fresh crepes are a lighter alternative to the traditional pasta (so you can eat more!). These are packed full of ricotta, spinach and plenty of parmesan then served with a rich tomato sauce and just the right amount of salt. This is Nonna Igea (Vincenzo's Plate Nonna and cooking inspiration) cannelloni recipe and it's been passed on from generation to generation. These cannelloni made with crepes are originally from the province of Teramo, Abruzzo.

Reminds me of my grandmother's cooking. Her mom and dad were from a little town about 30 miles inland from Naples. How I miss her and her cooking. Thank you and Nonna. :)
one of my favorite dishes. My late mother and grandmother would make this. I must try this recipe. They were from Faeto, Italy. Sunday sauce was a staple my entire life.

Mommas recipe for Crepes is so much easier to remember ( one egg to one handful of flour- oh and the egg of water) I will no longer have to hunt through my recipe box each time I make crepes). Watching Nonna make crepes and stuffing them was like watching a master at work

Used the filling for regular cannelloni pasta, made the crepe the next morning for breakfast. Made them three times during the next week! These crepes are amazingly easy and delicious!

I remember you had a video about what you liked or did not like about Italy. Italians are very tight with their family and that's really nice btw. I've never been there but learned it from popular culture

@@vincenzosplate My Mother was the chef at our restaurant for almost 40 years. She made everything. My sisters used to help her make cannelloni, manicotti, gnocchi...so many things. What an amazing woman. God bless your Nonna.

Vincenzo this is nothing less than remarkable! I still have taste memories from when I was a frequent guest in Abruzzo 25 years ago, the nonna that hosted my is still alive and now 103 years old - so nutrition matters is guess. Please ask nonna Igea to share the recipe for scrippelle al brodo.

THANK YOU! this dumb recipe i was following (plus a lot of places on the internet) were not saying how to roll it. just to put the filling "at center top of crepe, spread out to the edges." it also mentions rolling AND a packet. from learning about crepes there is indeed a folded packet formation, an open roll, and then what she did. what she did is what i THOUGHT might be what they wanted but there was no picture. so, thank you very much! this recipe was called Manicotti, and i realized, reading through it that it was calling for crepes! they just didn't really say that, but i recognized the process. *the internet* just taught me that the dish this recipe is for is actually Cannelloni (and i'd never heard of this.) for an italian cookbook it seems really stupid to call this the american name, when in america Manicotti is a totally different thing to this!! oh well. i found your channel because of that stupidness. subscribing :)

This is a great recipe, never seen it made this way before as I don't make the crepes and just use the dry Cannelloni tubes! But they look incredible, my only complaint is there needs to be some meat in those! :D
The crepes are quite nice. I was looking for traditional pasta, but the crepes are fluffy, light and creamy. Its a great idea. Probably heresy for traditionalists, but I think its much better than pasta

oldschool cooking is the best....don't need fancy equipment, dont need to worry about strange measurements. Just pick what you have and 10+10+10 of everything and boom! You got 30 crepes

They’re soooo good!! I prefer them made with crepes
Scold me as much as you like, but a quick and easy cheat is to pour boiling water over dried lasagne sheets to make them pliable. Just make sure your sauce is a little wetter than usual. The pasta will soak it up.
The Italian version of taquitos.
