MANICOTTI INGREDIENTS:
Sauce/Gravy:
1/2 chopped Onion
2 cloves Garlic
2 Tbsp Olive Oil
2 qts Tomato Puree/CruschedTomato
1 tsp Basil (dried or fresh)
1 Tbsp Salt
Crepe Batter:
3 cups warm Milk
1 Tbsp Butter
1 tsp Salt
4 extra large Eggs
4 cups All Purpose Flour
Ricotta Filling:
2 lbs Ricotta (Galbani brand)
1/2 to 1 cup grated Pecorino Romano Cheese
1 lbs shredded Mozzarella (reserve 1 cup for topping)
4 extra large Eggs
1/2 cup chopped fresh Parsley
1 tsp Salt
1/2 tsp Pepper

FAQ:
Who is this lady?
Gina Petitti was born in 1935 in Faeto, Italy. Her family ran a farm in Italy and she met her husband, Vito, in the same town. In 1970 Gina, Vito, and her 4 children immigrated to America. Gina’s husband passed away in 2012, but she is surrounded by a large family, which includes 9 grandchildren, and lives 5 minutes away from her eldest daughter in New Jersey. Gina spends her time cooking, gardening, and being an active member of her local Church.
Where does Gina get her recipes?
Most of these recipes are from what she learned growing up in Italy, but some of them have evolved over time. She has also learned new recipes from friends and family in America. She is always eager to try new things.
Why is no one helping her in the video?
Grandma Gina doesn’t want help! Usually, it’s because we will slow her down or not do it “her way.” For the videos we only show her, but when the camera cuts we jump in and help form the cookies or prep for the next step.
Why don’t we buy her a new...?
Grandma Gina has a closet and garage full of new gadgets, spoons, forks, pots, etc… but she doesn’t like them because she is used to doing it with her old tools. She has fun getting her hands dirty!
Who is behind the camera?
Her retired son-in-law films, her daughter helps her prep, and she usually has one or two grandkids in the kitchen.
Does Gina read the comments?
We print out and show her how much love she gets from all her viewers, and she is very thankful and hopes you enjoy her cooking! Your comments bring her lots of joy, laughter, and inspiration to make more videos to share with you.

    The American dream: Immigrating here and leaving your beloved country, working hard labor, learning English and new way of life on the go as your children reap the benefits of your labor so that they can be great, keeping your heritage and traditions strong and passing them on . . . AND being 80+ years old with a youtube channel! All while singing, sharing, and being thankful. I am a first generation American and I am so proud and supportive of people like Gina.     Who in the world would give this lady a thumbs down....? The dishes she makes are genuine Italian. Are there other versions out there...? Yes. But hers will not disappoint ........... This lady and Pasquale { the other Italian cook } are simply the best out there on You-Tube. Get some of these dishes on your dinner table, and, .........watch how folks start showing up at the house......! This lady is GREAT. THANK-YOU for sharing your years of talents.

    Her tomatoes are fresh from the garden not from a can with added salt, you need to add salt for taste. Obviously one can cut the salt as needed.

    I will no longer buy the manicotti tubes in a box. I tried this recipe and it was outstanding. Husband loved it. I halved the recipe and it was perfect for my husband and I. We even had leftover for lunch. I love your videos. God bless you.

    Probably the same people who downvoted her lasagna video. The comments in that one were ridiculous. Tearing her up because she made one of the lasagnas (she made two) with ricotta. She even said it's not how she would usually make it but some of her family likes it that way.

    Nonna Gina you are such a blessing! My mother never let me in her kitchen and my grandmother wasn't living so I had to do it all on my own, cooking. I feel like a little girl watching your videos, so happy as if you were my Nonna. God bless you always you are such an angel!

    Gina reminds me of my mother who made all these dishes she makes. My mother passed away ten years ago. Gina makes look so easy and doable. I enjoy watching her cook. She puts so much love into her cooking. Thank you Gina for sharing your recipes, like my mother the recipes are in your head

    This is a beautiful lady and I am so happy. I found her on the Internet. She makes your heart feel so good. She is like a little angel.     Absolutely out of this world! I watched this video a long time ago and have made these manicotti this way several times. There is no comparison with the dried tubes sold in the grocery store. All fresh ingredients and made with Nonna love. How could you go wrong? Thank you so much Gina. You are a treasure! 👍

    4:57 - Love how you teach people, when adding water, to pour into one of the emptied jars, and then that into the 2nd jar, to get the last of the good stuff off the jars' sidewalls - I hate how they don't do that, and how they 'lazy scrape' on TV food shows. That's not the way our moms and grammas' did it in the 'Waste Not, Want Not' generations! Love you, Grandma!

    Nona Gina…. Can you adopt me??? I have spent hours watching your videos while in the hospital. You are just a joy to watch and listen to and I can’t wait to try some of your recipes soon! You remind me so much of this woman I met in Rome with your spunk and infectious energy. I love hearing your stories and hearing your singing.     My grandmother used to talk to me the same way. I understood everything she said. Her broken English is the same. Her Italian words are the same dialect. Watching her allows me to spend some time with my grams. Miss her so much. Your grandmother must be from the same area my grams lived in Italy. Unfortunately I don’t speak Italian. My parents always said, we are in America now. We speak English. It was the 50s and it was frowned upon if one spoke their native tongue. It was deemed disrespectful not to embrace the American way. It was a stupid notion. I’m second generation Italian. My mom born here to parents that immigrated from Italy in the early 1900s.

    I'm 58 so I've seen my share of home cooking shows, this beautiful soul has stolen my heart forever, she is truly a treasure to watch make all these fabulous recipes. I've had the pleasure of making a few my family absolutely loves them. Ok!!     She’s the best! My kids don’t have grandparents and so they don’t know just how special and magical this generation is, or how important cooking with your grandma is. I am happy to share my kitchen and passion for food with my kids and hope when I become a grandmother ( many years in my future- my kids are 11&7) I will share my kitchen and love of food and family with them.     Something about the way she cracks eggs was so warming to my heart. I crack eggs the same way my Grandma taught me. I wonder if this sweet Nonni learned how to crack eggs from her Grandma, who learned from her Grandma, who learned from her Grandma and so on. It’s very heartwarming to for me.

I grew up on TEX-MEX and didn't have Italian food until I was a teenager. There is so much I want to learn about the cuisine! What do you add mushrooms to? I love your videos and learning your technique...like with a ladle and a spoon when you spread gravy!

    I never knew Manicotta was a ricotta/mozzarella stuffed crepe baked in pasta sauce ... and now i know what I am going to master before my own family gets together for our end of year get together ... Grandma's Manicotti!

    I just found this, and I am crying big tears. I had grandmothers like this. I miss them so much. I love that there are still grandmothers like this and that the modern times cant take them away. I hope they never go away and there will always wil become such women for every generation of humankind.

    My grandmothers had passed before I was born. Watching this reminds me of what I missed. Thank you for sharing your love of family, cooking, and being you. You wiping off the dishe rims to keep them clean is one of my habits. No rim scrubbing for us. You are going to do whatever you do the very best you can. Your singing brought joy to my heart.     I love how Grandma Gina scrapes the spoons and jars and doesn't waste. How she uses her fingers. It is the sign of someone who has a love for food and cooking and making her family happy! 😊

    This nice lady is gold...she knows everything very well. She is very precious and great too. She is so lovely, kind and clean. She speaks English very well. I wish to see her.     I stumbled upon Grandma Gina's youtube channel accidentally. I decided to watch it and see what the scoop was. I am so happy I did. I never realized how much of a TREASURE I was missing out on. Not anymore though. I quickly hit the subscribe button and have been watching her ever since. My family and I love Italian cooking, and thanks to Gina, we now enjoy a little taste of Italy in our kitchen. I love to cook and I have been searching for good Italian recipes for many many years. My search is finally over. I have watched every one of her videos from start to end. They are informative, entertaining and most of all, DELICIOUS. Thank you for sharing you knowledge Grandma Gina.     Grandma Gina, you are such a lovely woman and I wish I could give you a big hug for being such a great cook, a great singer and for all of the love and passion you have for your Italian recipes, all the way to your family and from your Italian country back to sharing everything to us!!!!I love watching you cook and this recipe is one of my favorites and I wanted a bite so bad with you because it looked fabulous and SO, SO GOOD❣️❣️❣️❣️❣️❣️❣️❣️❣️❣️ What a big heart you have to help cook for your family. I don't know how many hours you spent making your sauce/gravy as well as the pasta, Before you were able to start putting it together but I am like you, I start a few days ahead when I make my sauce and pasta and then I put my Dish together on a DIFFERENT DAY!! It's just too much if you try to do it all in one day especially if you want your kitchen cleaned up before you dying together and if you're going to have other dishes with your main pasta dish. I love listening to you talk and especially I love listening to you sing when you cook or bake either one doesn't matter to me I just love listening to you sing. I have shared your recipes with my sisters, and we miss our grandmother very much, so we have decided we are adopting you as our grandmother♥️♥️♥️♥️♥️❣️
