The stockfish that arrives here comes directly from the Lofoten islands(Norway). The story goes that in 1431 Pietro Querini and his crew were sailing North and after a journey that had seemed unfortunate from the beginning there was a shipwreck and the survivors found themselves in the Lofoten islands. They were rescued and taken care of, so they spent the colder months there and when the season allowed them to take sea again, they slowly returned to Venice and brought lots of dried stockfish, given to them because it was a durable food that would have lasted for the whole journey. The enthusiasm with which it was welcomed in Venice was due also to the fact that in that period in the different convents and monasteries in the region, people were eating too much meat and dried stockfish represented a perfect solution to reintroduce the habit of the venerdì di magro (light Friday). Due to cultural and historical factors, the Italian market breaks down into five major zones: Venetia, Liguria, Campania, Calabria and Sicily. Stockfish is less popular in the other regions (with the exceptions of the two cities, Livorno and Ancona, that are traditionally longstanding consumers). The methods of preparation of this product vary from region to region. Consumers must therefore purchase the right kind of stockfish. Before cooking, the stockfish must be “softened” by soaking in water for at least one week. Consumers generally buy it in already cookable form. In north-eastern Italy, people prefer a leaner fish, which is beaten to “recover” it. The preference elsewhere is for a fattier fish, which is “recovered” as a whole piece, After softening for a few days it is then divided up.
Thanks for spreading the beauties and goodies of my beloved city ♥️

Are you from Vicenza? It's such a beautiful city! One my best friends is from there!!
Oh my gosh! I’m from Vicenza and it’s such a rare thing to see someone from abroad talking about this city 😄 well done!!!
Here in Vicenza we also have "Sopressa" a particular kind of salami, very tasty and really really delicious, it is LOVED all over Veneto. Then we have the Asiago cheese, made in the mountains (about 1h away from the city) and well... we are in Veneto, so you can find every kind of wine😏

La soppressata è un salume tipico del sud. Sicuramente è di stampo meridionale quella che dici tu.
@edoardolorenzoni4511
3 жыл бұрын
It's amazing how you can evoke so many positive reactions in just a few minutes. Food, family, and amazing traditions. So powerful! Thanks for sharing, Mark!
Bigoli con Anatra is my all time favorite. I probably had it a hundred times during my years in Vicenza. It was always my go-to. It's also a regional pasta/dish so it's even a little hard (though not impossible) to find it outside the Veneto region....let alone back in the states. Basically unless I buy the custom pasta die (from Italy) and make everything from scratch, it's fairly unlikely a person is going to find this dish in an Italian restaurant in America, including ones that lean more towards the "authentic" side. I miss it and agree it is an absolute must try.
Thanks for speaking about Vicenza, we all really hope things are going to get better. BTW The cats' "legend" is way ancient than the WW2...there is also an old doggerel referring to it.

It’s a nice city with really good markets and events going on everywhere. I remember walking around after going to a chocolate fest and stumbling on the new star wars movie that people were watching outside for free. The people are pretty friendly and the museum rotates a lot of good artwork. The traffic kinda sucks but it is outweighed by the food and stores.
lmao, the fact that even outside of Veneto the story of Vicenza's people eating cats spread is hilarious
I’m going here in 2 weeks for a wedding!!! Ahhhhh I’m so excited!!! 😍🥰
The area is also known for its truffles. Lots of great pasta con funghi.

CIao Mark,da vicentina DOC ti consiglio anche la soppressa, fonduta di Asiago con polenta e "polenta e osei" ( altro che i gatti) .Vieni a casa mia ti faccio assaggiare un sugo di anatra spettacolare! ;-)
Basically any traditional Veneto dish. Plus each comune (when it's in season) has a different bit of produce like Marostica is known for its cherries, Bassano for its grappa (brandy effectively and it's great, plus if you go there, drink a mezzoemezzo as it's the local drink) and asparagus, Nanto for its truffles, peas from Lumignano, rice from Grumolo. So if you go in the right season, do try to see if they make anything with those products or buy some and try it yourself. However, sopressa and polenta are things you need to eat in Vicenza plus Asiago, Breganze and all the other cheeses you'll find!

I'm from Vicenza and live in USA. You forgot about Tramezzini, Tartine and Spunciotti that are served for Aperitivo with Sprits Aperol. Also you should have our wines there, like Soave, Fragolino, Prosecco and many others from Veneto. Other foods to mention are Sopressa Vicentina and Asiago cheese, Trippa alla Parmigiana (Tripe), Polenta e Musso (Donkey), Coniglio in Teccia (Rabbit), Grigliata Mista (assortment of grilled meats), Pesetto Fritto (small fried fish) and so much more... I would need so much room. :)
