I can do both spaghetti and linguine. But I prefer spaghetti.

Or at least say: Pasta my way, don't say its original or authentic. Otherwise the italian pasta police would have caught me many times. If I say Ragú Bolognese it's the real deal and we can argue if my choice of white wine (Trebbiano d'Abruzzo) was authentic, or if I should have used red wine. But there are no wierd additions in it.

Authentic Carbonara is made with military bacon rations and powdered eggs. No really, look it up, it's the original recipe.

Elena, I can only agree with you, you are absolutely right! ❤ Food always brings beautiful memories, and create new ones!
I make my carbonara just like yours, but I have to use parmesan and bacon since I can't find pancetta neither guanciale in my city (Maringá, Brazil). Once I found pecorino and bought it, but it's extremely expensive here, so I can't always use it. But I'll be moving to Italy next year, so that problem will be solved 😃

Where I live in New York Parmesan Reggiano is more expensive than Pecorino Romano , yeah Guancale is very hard to find the only way I got it was on line and it was expensive but pancetta you can get that in any super market I even have a deli who makes their own pancetta, I've made carbonara the traditional way with guancale, pecorino Romano, eggs and pepper it came out great and I've made it using Pancetta which I thought was better than the Guancale but to me Bacon was the best of the three all are very good but that's just my preference you might like guancale or pancetta better but always try to make the traditional version of it and what I also use is Prosciutto for every pound of pasta I use a pound of meat 12oz of bacon and 4oz of Prosciutto you cook your bacon till it almost done than you add the Prosciutto, but if you want the ultimate Carbonara use all four meats Bacon, Pancetta, Guancale and Prosciutto and believe me it doesn't better than that

Not a big fan. It's like he changed his audience from adults to children. Just happy he's not overusing them at least.

@@vincenzosplate For dinner today I made it like in this video where I put the eggs in last. The texture and consistency was better than ever! Still haven't managed to find guanciale so I mixed some good bacon and prosciutto and I had to put in some olive oil because there wasn't enough fat rendered out. But next time I will track down some guanciale and make the real deal!
I had this at a friends house as a kid but they used cream, bacon and onions and I loved it. Then later on in life made it the authentic way and it’s for sure my favourite dish in the world

@@vincenzosplate I did put I had to use pancceta. Guanciale is nearly impossible to get in the US.
My butcher told me yesterday that most of the "pig cheek" in Australia is sent overseas, but he'll TRY and get me some. So looking forward to making this!!!

Your regular pig cheek from the butcher won’t do. Guanciale is specially cured with herbs and spices for months before they sell it. You’re better off trying at your local Italian specialty store.

@@HW.0029 Even the "fancy" Italian restaurant here doesn't have Guanciale. I asked if anything was made with it, and the waitress asked me what it was. Their carbonara was made with bacon, yolks, cream and Parmesan. Their lasagna's pasta was cooked into mush, with a bechamel sauce that had no pepper or nutmeg (flavourless goop), and it was topped with thick mozzarella. I have little hope of finding an Italian specialty store here. :-(

@@lilacDaisy111 Which part of Australia you live in? I’m in Japan and I can find guanciale, but it’s expensive and they only sell in big 1kg slabs so I use pancetta instead. Australia is a “white country” with a lot of “white food” and I’m surprised you can’t find guanciale lol.

In other Italian videos that I've seen on making carbonara, they only use egg yolks. At least in this version, the whole egg is used. Nothing is wasted.

exactly! when you see only the yolks used, that is the modern version of carbonara, while the classic one involves the use of the whole egg, in this way nothing is wasted!

I ate there 3 times. Food is excellent and staff are very nice. Couldn't do enough to make us feel welcome. If your in Rome go to this place. 👌

That's a great recipe. I do the same as you do, mix the cheese and eggs with some pasta water and then add it into the pan. My italian uncle does the same thing, makes the whole dish super creamy

I once went to an “authentic“ Italian restaurant here in Rhode Island. It was part of a restaurant consortium. Anyway, they had carbonara on the menu. It’s one of my favorite dishes. I have it like for every meal when I go to Rome. (Not really, but you get the idea.) The description on the menu said that it included cream. I asked the waitress if the chef would make it authentically, without cream. The waitress came back and said that the cook said, (...drumroll...) “You wouldn’t like it that way.” 😱 After asking the waitress to explain to the cook that I know how carbonara is made in Rome, I ordered a steak.

Had almost the same problem different country they are afraid of serving „raw“ eggs ...but at the end I thought better choose something else before they serve scrambled carbonara 😂

I had great steak in NYC with nice potatoes and a lousy salad. Great pastry in the morning, oké Chinese in China Town later. Then in NJ horrible pizza with almost flavourless beer, then great Japanese food on some hill and later that night very bad champagne (the bartender excused for its quality beforehand but when I payed with an Amex Platinum card, which wasn't mine, he almost kissed me on the mouth).
This was magnificent! Now I'm hungry!

The cast iron skillet pan used by the pros is that difference of why that chef takes it off the heat before adding the egg. The cast iron skillet pan holds the heat longer compared to the usual non-stick-coated skillet pan used at home.

this is one of the nicest looking carbonara ive seen haha, personally like the drier kind. Once you have a creamy soupy "carbonara" at some restaurant it scars you for life haha.

@@vincenzosplate I've seen people use only the yolks, and then put the fat from the pan into it and blend it... which kinda resulted in a cream that looked like mayo.

I wondered if you had any suggestion in what to use to do a vegetarian version of it (I'd style use the egg, but to replace the guanciale). Maybe video of how the guanciale is done could be interesting (and then maybe using the same spices and aromas to marinate some vegetable protein). Wonderful video again sir !

What great charisma. Buon lavoro, Vincenzo! I like your version of carbonara better. The skill required to cook the egg without scrambling it is an acquired skill. And when you do it well, it is much better than the classic, half cooked half creamy egg sauce.

Strozzapreti is my favorite for arriabata Papparadelle or tagliatelle for ragu Rigatoni for alla grica, sunday sauce, pasta alla forno, or alla norcina Bucatini and spaighetti for carbonara or amatricana.

@@vincenzosplate well I've made a little mistake at first. Went to the butcher for panchetta and bought pre cut (cuts were far to little, didn't noticed at first) and used real parmesan. So not really authentic but really good👍

I am Filipino and I am trying to make my own guanciale with pork cheek and using parmesan cheese 'coz pecorino but with having a family member who is allergic with egg I make 2 variants carbonara, one with cream for family members who are allergic with egg; and the other with egg this one is mine. Hoping you won't get mad with me Chef Vincenzo doing a cream version. ✌😉

One question: when going to a restaurant in Italy you often see pasta dishes as a starter, when outside of Italy it is mostly served as a main course. Why is that? Can someone explain?

I confess, I start with a cold pan and render the fat, but when served on the plate, I like a small trail of olive oil. Especially very good extra virgin oil, I can not heat that, only for finish or cold dishes.

Fun fact, leave the egg out and you got pasta alla gricia which is basically a step in between cacio e pepe and carabonara Cacio e pepe + guanciale = Pasta Alla Gricia Pasta Alla Gricia + egg = Pasta Carabonara

I may be Korean but I worked in an Italian restaurant so I've learned a lot about Italian food so its great to see a channel educating people about authentic Italian cuisine. Keep up the great work! I'm going to by some of that guanciale at a local Italian deli. Will reggiano (cow's milk)make a difference vs pecorino (sheep)?

I recommend to cut it into portions and vacuum seal them. You can keep vacuum sealed guanciale in the fridge for a few months

Imho it is not a perfect carbonara, the guanciale is sliced to thin. Yes it will be crispy but also dry. With ticker guanciale the outside can be crispy while the inside is still juicy and full of flavor.

well, you're probably right! Certainly you can cut the guanciale thicker, but not too much, and remember that it would be better to cut it into strips and not into cubes!

I'm confused, so when making spaghetti alla carbonara is it okay to use some of the pasta water that was used to boil to the pasta to make the sauce creamy? Because I asked a KZreadr named "Pasta Grammer" And she told that you couldn't use pasta water. So who's right?

I believe that the pasta water is very important to create a creamy carbonara, "bavoso" as they say in Rome!

Swedish TV-chef Markus Aujalay says he learned to make carbonara at the restaurant La Carbonara in Rome. And according to him it's where the dish was originated. He is using pasta penne, like the chefs at La Carbonara told him is the way to go. His video about it can be found on KZread too. But is it really AUTHENTIC?!
