Carbonara is one of those things that has to be made from scratch with fresh ingredients. It doesn't even take that long to make! But what would you expect from people that sell pickled boiled eggs

He was nice but he very clearly didn't like anything and didn't hold back the thought. When he was pouring the sauce over the meatballs I felt like I was watching Kitchen Nightmares. But I think he did restrain his demeanor because he knew that _they_ knew it was all bad.
I love that the chef that cooks for the most famous people still have an unrivaled sense of humor.

That "my grandma would have been a bike" clip on UK TV is still one of the funniest TV moments I've ever seen, and it was in defense of traditional Italian cooking too
The contest aspect actually turned this into a much more interesting format than you seem to have originally had in mind. Keep that, next time they get to go in knowing it's a competition. Also, if you can get a few more items in there that would be cool, best of 5 plz 😁😁

6:57 A traditional carbonara is pasta,cheese,egg,pepper and ham.The pasta is boiled/simmered in boiling water for around 2 minutes, drained and then the pasta is immediately dumped into the pan again and egg (the egg is whisked and combined with Parmesan cheese and pepper) is tossed through on 0 heat because the egg is cooked by folding through the pasta. Then you add your sliced ham is folded through.
I love it when people say to others “Oh you have to try this! It’s disgusting!” 😆😂🤣 not going to lie, I do the same thing 😆

That's true that we don't eat pasta with meatballs in Italy, but in Teramo (Abruzzo) we do have something similar called "chitarrine alla teramana" that is a kind of handmade spaghetti with tomato sauce made by nonna (from 6am) and small meatballs (pallottine), it's a must try!
