Italian Beef Sandwich with Melrose Peppers; Cooked Using the SNS Grills Drip 'N Griddle Pan

Another iteration of the Chicago Italian Beef Sandwich. This time coated with fresh herbs, garlic, and onion then cooked on a roasting pan (the Drip 'N Griddle Pan) in the SNS Kamado and served with a mixture of fried sweet Melrose and hot Havasu & Fresno peppers.
Recipe:
Ingredients:
3-4 lb eye of round roast
Handful of fresh rosemary, minced
Handful of fresh oregano, minced
Handful of fresh thyme, minced
Handful of fresh basil, minced
Red onion, minced
6+ garlic cloves, minced
Salt, enough to dry brine the meat.
Black Pepper, 1+ tsp
Olive oil
~3 cups water in drip pan under meat
3 cups beef broth
Sweet peppers (Melrose in this video)
Hot peppers (Havasu and Fresno in this video)
Fontina cheese, shredded
Turano rolls
Directions:
1) Dry brine roast overnight.
2) Mix rub ingredients (herbs, garlic, onion, black pepper) together with enough olive oil to turn into a paste rub.
3) Apply paste rub to meat.
4) Set up grill for indirect cooking at ~300-325 F.
5) Place rubbed meat on roasting pan on indirect side of grill.
6) Cook for ~2-3 hours until 135 F int temp.
7) Remove from grill, and let cool.
8) Save meat drippings in fridge for later.
8) Wrap meat in plastic wrap, and chill in fridge overnight.
9) Unwrap meat. Slice meat thin.
10) Prepare beef broth, and add reserved meat drippings. Heat to 145+ F.
11) Fry peppers in olive oil.
12) Make sandwich.
Pour juice on opened roll.
Add meat.
Add peppers.
Add cheese.
Add more juice if desired.

    Interesting variation, I've enjoyed the Sliced and crumbled-shreds style you also showed. I agree the better than bullion is awesome, I've added a little garlic and basil and let it cook down with the aujous. Wow, those peppers had me ready to take a bite...

    Looks delicious, brother! I was born and raised in Melrose Park so I’m familiar lol. I love doing homemade Italian Beef. It’s one of my favorite things to make and eat.

    That’s right. Did you ever grow your own Melrose peppers? No matter how many times I imitate the traditional method of using sliced roasts, I still have yet to find a better tasting homemade beef than using a chuck roast.

    @@BEERNBBQBYLARRY Chuck roast had the right amount of fat content. It always produces a more succulent result although it’s not traditional. Never grew my own peppers but they are amazingly good! My father in law makes his own homemade giardiniera and always tries to get me with the heat but to date I have handled it lol.

    Hey Larry I guess this video came up from watching your homebrew videos. I grew up in northwest of Chicago (59&14) haven't lived there for 45 years but you make me miss Vienna products so much (Luke's on rand) and many others. Looks 👍 great. FYI I picked up a couple flot it 2.0 because of you. My kegs haven't hit bottom yet I am interested in seeing what's down there when they do . Especially the blind pig clone. Keep it up and thanks for the Chicagoland food memories. I'm thinking of favorite pizza joints now. Damn it I will probably have a dream tonight about eating an Italian combo like Homer Simpson has about doughnuts and my pillow will be half gone in the morning.

    Thank you for sharing Larry. I wonder if poolish ciabatta bun would make decent bun for this recipe. Instead of steam baking the buns, I would bake the buns without steam then top with butter after taken out of oven? This way crust would be softer.

    ciabatta will work. It's a high gluten bread like the beef rolls that can hold the juice well without falling apart.

    I grew up in Maywood and was lucky enough to eat some great beefs. Those Melrose peppers are nonexistant where I live now. And I would destroy that sandwich in your vid lol! Looks delicious! ✌

    What I do is, when I’m done and it’s gone I freeze the juice and keep using it over and over, ever time I make it it just keeps getting better. I’m not 100% but I think Al’s #1 beef does it that way.

    Was just discussing this with Mike from Everyday BBQ; also a local guy. I could that do but really is simple: 1) Chuck Roast (braised or seared and in crockpot) 2) sous vide with a sear at the end. 3) indirect on grill like this video. 4) oven

    Great Video Larry. I overdo everything. This sandwich looks perfect. But my zealotry for food would cause me to add Italian Sausage, Marinara, bake the bread with 3 cheeses on the crust, etc. etc. I believe they call me gluttony. Again great video.

    A combo?! Also delicious. I sometimes add red gravy to them when I dine out, but don’t normally have any on hand ready to go at home. I used to make my own bread a couple times per week, but haven’t had the time in recent years to keep it up.

    @@BEERNBBQBYLARRY Absolutely the combo. When I was a local semi driver around the city, I knew where all the good chow was. The combo was my goto on the days when my appetite was a distraction. If I could swing through a Portillo's, any Greek restaurant, even a couple of surprisingly delicious Mexican food trucks, I could avoid fast food chains. I have a great story about delivering products and trading brownie mix with the guys on the dock at the Gonnella factory in Schaumburg.

    What do you mean that didn't look good? It looked friggen awesome! One thing I can't stand is when froo froo "chefs" do everything they can to make their two little nibbles of disgusting tasting food look good for the camera. Screw them! You keep doing what you're doing. It looks (and I'll bet tastes) fabulous. Another awesome video sir! 👌👍🍻
