The reason it was bright in that cave was because there was Glow Lichen down towards the top of the cave as you walked down. They added it in 1.17.1 and it gives off a small glow.

The first cave you went in with the "mysterious" light source was Glow Lichen, but it was on diorite which made it harder to see in the limited time you were in there.
