Is this the most bitter tiki cocktail? [Jungle Bird]

I've always been scared of Campari. If you taste it on it's own, its a shocking flavor. This is a post-'golden age of tiki' cocktail that features Campari. Was it as bitter as I thought it would be?
To make the the drink in the video you will need:
--------------------------------------
1/2 oz fresh squeezed lime juice
4 oz pineapple juice
3/4 oz Campari
1/2 oz simple syrup
1 1/2 oz dark Jamaican rum
--------------------------------------
Shake and open pour into double old-fashioned glass or a ceramic bird mug.
Garnish with an orchid, a cherry, and a mint sprig.

To be fair, I only designed the logo that the mug was based on (and the coaster). PopTiki of Colorado designed and produced the mug. He's an amazing artist (and an all around swell guy).

The older I got the more I appreciate the bitter drinks, jungle bird is a solid drink. Jungle Bird is also a nice spot in Sacramento
I avoided the Jungle Bird like a rogue wave in the Pacific but I decided to ride the wave and hope for the best. I'm shocked how fantastic this ride has been, not the bitter bugger I was expecting!
Love that bird mug. Very clever with the coaster being the bird's claws. I want one!

Here in Cape Coral FL we have the Jungle Bird Tiki Bar which serves the Jungle Bird cocktail. Invitation sent, Spike! We love the show, but I thought I found that this drink started in the late 60s

So glad you are a Jungle Bird convert! One of my favorite cocktails. You mentioned Smuggler's Cove.. if you're ever up here, Zombie Village has a clarified Jungle Bird, the J.B.M.P. Definitely one not to miss if you're visiting.
Spike We always love your videos..Thanks!... I personally dislike Campari on its own. I grew up in an Italian neighborhood and our neighbors would serve it with soda or w/o before a meal. I read it is made from the "chinotto fruit" which resembles a small orange and is grown in Sicily. Tart & bitter but good for the digestion. Salud!

The jungle bird is one of my favourite, even though I usually use 2oz of rum. The OG JB is just a real nice, fruity and balanced drink. I'm undecided about the 'modern' JB with 2oz pineapple. I can see why some like it but I prefer the original.

@@BreezewayCocktailHour Try swapping the simple with cinnamon demerara syrup. It is my favorite Jungle Bird riff.
Somewhere there are Italian dudes sipping Campari straight up. My mouth puckers weirdly as I imagine.
Campari works well as a mixer to smooth out sweet vermouth in several mixed drinks.
Looks I’ll be looking into making this next! Side note : that cover of Quiet Village is legendary sounding. Incredible!

I replaced the Campari with Averna Amaro (slightly darker than Campari) and it's wonderful.

Campari is definitely an acquired taste. The Jungle Bird is the only cocktail with Campari that I actually enjoy. Never drink that straight! Lol
I'm with you Spike, not a bitter cocktail fan. I tried this recipe a couple years ago and the Campari was too much for me. But if someone who feels the same about bitter enjoyed it I'll give it another chance. 🍹

The jungle bird is just excellent, I should really make one tonight. The Smuggler's Cove version also makes a good base for a clarified milk punch. Really good for a party I'd think.

I use Tempus Fugit Gran Classico instead of Campari for all applications, including the Jungle Bird. It’s a great upgrade.

The Negroni is a popular Italian cocktail: equal parts Campari, Blue Sapphire Gin and Sweet Vermouth. Cheers!

One of my favorite drinks! I typically go with the Smuggler's Cove recipe and sub Bruto Americano for the Campari. Love that mug.
I do love a delicious Jungle Bird. I order this drink at every Tiki Bar I visit and I always ask the bartender to make it the way they would make it for themselves, and it always is a banger. I love love love this cocktail. On another note, I want that Bird Mug. Gimme gimme gimme.

Those bloopers reminded me of Jacky Chan bloopers for some reason... And yeah, I had the same facial expression after tasting that bitter potion.
Finally :-). One of my absolute favorites! I've made it with a plethora of different rums. A Dominican rum, aged and dark of course, is my go-to for this specific cocktail. I also use demerara syrup and Carpano Antica. Great episode! I enjoyed it a lot.

Super jealous of your bottle of Doctor Bird. Very hard to find around here. I had some at Smuggler's Cove in S.F. and have been looking for a bottle ever since. Of course it can be ordered online, but it would be nice to find it locally.

Spike, so glad you’re making room on the palette for Campari. I believe you originally felt similarly about Dr. Bird because on its own it’s rough. But in any cocktail Dr. Bird is the absolute best. It’s becoming more difficult to find these days. Anyhow, give the Kingston Negroni and the Bitter Mai Tai a try. Both amazing. Cheers (keep ‘em comin’)

I've had success with: 1 Appleton Estate 12 1 Pusser's Gunpowder Proof 2 Pineapple Juice 1/2 Campari 1/2 Lime Juice 1/2 Demerara or Turbinada Simple Syrup I think it's nicely balanced with nothing overwhelming the rest.
I feel your pain Spike…… I tried Campari years ago. Never Again!

How can I be on the show to get a pin? As you said you're not a fan of Campari, make Rum Negroni or a Boulevardier as it takes a bit off the edge of the bitterness. If you're down to get experimental, maybe a Campari Colada is in the future.
After that raving review I don't think the Campari folk are going to sponsor this video 🤣

You think Campari is bitter, try some Aveze lol. It’s a Gentian liquer and holy 💩 that is soooo bitter ! I’m trying to create a tiki cocktail to use it in.
I'm with you I don't like Campari I bought a bottle for drink and I have not use it again because of the bitter and like sour stuff.
Dude, you have to try this with the Hamilton pot still Rum
The only Tiki Bar I know of in Sacramento is The Jungle Bird. It’s a good one too! Only an hour away from me. Nice job on this drink.

Well, I decided to try this recipe. As I mentioned before, I am not a fan of Campari, but I have this bottle and it needs some TLC. Followed your recipe, except added .5oz rich simple and .5oz Campari. Still was too bitter to enjoy. Maybe I will add more rich simple, or maybe no jungle bird for me.

I've never tried this version only the Smugglers cove version, I will have to try doubling the pineapple juice because that makes sense, the campari might be tamped down by more pineapple juice increase.

Bitter? No. Balancing out the pineapple juice and syrup, adding something "extra", providing depth to the cocktail? Yes.

I'm with you. I HATE Campari. I hate negronis. I have a very low tolerance for bitterness. I've made Jungle Birds for friends who enjoy them, but I have not enjoyed them myself. HOWEVER, I've only made the contemporary version. I haven't tried the original with 4 oz of pineapple. That may be the key for me. I'm excited to try it. I didn't know it existed. Thanks for making it known!
Once you realize the bar is called the aviary bar and not Avery the cocktail name makes more sense ;)

Use APEROL
I was sitting at a bar in St. Thomas and was in a bad mood, long story. Anyway, I ask the bartender for a Negroni, explaining I wanted a bitter cocktail to match my bitter disposition. Anyway, she and I got to talking cocktails; she shared with me the Nastiest cocktail a customer had ever ordered... 2 ounces Milk and 2 ounces Campari. 🤮 Even the thought of how this drink would look and smell had me about to barf. When I got back home, I tried it for myself and Yike! It's ever bit a bad as you'd think it would be! Horrible! 🤮

I hate Campari and I usually replace it with Aperol. Not as bitter, a little sweeter. Bitter enough for me though.
