The Spritz dates back to the 1800s but Aperol wasn't created until 1919. It gained popularity in the 1920s and 30s and soon became the bitter liqueur of choice for the Spritz. Gruppo Campari bought Aperol in 2003 and embarked on a huge advertising and marketing campaign, solidifying the brands pairing with the Spritz.
APEROL SPRITZ RECIPE
INGREDIENTS
- 90ml Prosecco (3 oz)
- 60ml Aperol (2 oz)
- 30ml Soda Water (1 oz)

The Aperol Spritz is a bittersweet, refreshing summer sipper. This is PDT's version with a lower of Prosecco and the addition of freshly squeezed orange juice for a slightly sweeter and even more sessionable Spritz.

    I'm from Padua near Venice and for us Spritz it's a traditional drink. We're used to make it with Campari instead of Aperol or with Cynar (my favorite version). Cheers from Italy

    When Aperol representatives comes to events at my bar they actually teach us a different - much more efficient order: Prosecco - aperol - fill w ice - soda top This way it mixes automatically and serving is both quicker and more consistent . Thx for another great vid Steve!👍🙏

    I am Italian and my favorite Aperol spritz is made with: 2 parts of aperol 3 parts of Franciacorta brut (an italian prosecco) 1part of seltz water For Campari spritz i prefer using 5 parts Franciacorta brut 2 parts Campari 1 part seltz

As a non bitter lover I like that you're explaining which one you think we'll like and why. I would love to hear your personal favorite tho. I know that it's not always easy to pick a favorite and that if often depends on the mood, seemed like the case between these two ;)

    This is perfect timing. I was just on vacation and tried getting my family to enjoy a Negroni. Epic fail. My mom told me that when she was in Italy she couldnt get into Aperol. When I go back I'll bring the PDT version with me and I'll win them over.

    I substitute the soda water for a lemon lime soda for the extra sweetness/flavor and to me it's a bit better. I'm not big on sweet drinks, but this is a summer drink, so it gets a pass.

    Hey Steve, you should change the way to make the Aperol or Campari spritz. First, in the glass with ice , you HAVE TO pour the prosecco and after Aperol/Campari soda , why ? Because of the physical law the alcohol is heavier than sparkling wine... I can't wait to see you here in Italy😀

    my favorite is 1 part Aperol, 1 part Campari,3 part prosecco and a splash of soda.Garnish with orange slice. I usually rub my glass with orange peel at the beginning

    I have always added the Aperol after the Prosecco. That seems to mix the drink better because the Aperol is more dense than Prosecco and it flows to the bottom of the glass. If you add Aperol first it will stay on the bottom and you have to stir.

    Steve you're a legend. Fun fact if you have lined wine glasses after 60 ml of Aperol just fill prosecco to the 150ml line for a perfect 90ml then add ice and a splash of soda for the 3:2:1 recipe

    Yes, you definitely can make a Campari Spritz. Just know that Campari is 30% alcohol vs 15 for Aperol, and the cocktail will be a bit stronger. It seems Steve's video tomorrow will precisely be about those other versions of the Spritz, with a different base alcohol

    Great Video. Probably would of been nice to give viewers a basic rundown on what an aperitif is so viewers can understand WHY the 3-2-1 is bitter and therefore when the 3-2-1 version might be preferable (like before a meal).

    Avid Aperol Spritz drinker here. I might try that squeeze of orange in the traditional recipe. I’ve tried a heavier Aperol:Prosecco ratio and didn’t care for it - the heavier mouthfeel from more of the liqueur is just not what I’m looking for from a summer drink.

    Check out this cocktail I came up with. 1 cup aperol, 2 cups pear or apple cider and ice. The aperol counteracts the sugary sweetness and acidity of cider. Poor man's aperol sprizz. Super refreshing.

    I believe the order makes a difference and the prosecco should go in the glass first, then the Aperol, which is how it it shows on the label. I do like to start with a maraschino cherry on the bottom.

    Hi @stevethebartender The dryness in the 3-2-1 recipe comes from the prosecco, not from the Aperol. Try Aperol pure and you'll notice it's actually really sweet. If you like a bit more bitterness, add Campari to the mix. Your second recipe is not sweeter because of the orange squeeze but because you used more Aperol.

    I prefer the way they do it in Naples, quite alcoholic but with enough sweetness to round out the bitter flavor. Not sure how they do it but i do believe they put orange juice in. It can be quite a nice palate cleanser too when eating very savory italian food

    I make a version with Gin, which is also lovely, and a bit stronger. I skip the soda and just use Aperol, Gin and Prosecco. Yummy!

    I think the prosecco causes most of the kind of bitter flavour. I tried one with only more aperol before and it was less bitter and more sweeter. I like it more.

    I notice in many American bars they serve Aperol spritz very cloudy and full of ice while in Europe it’s served with less ice and it’s clearly see through and carbonated

    I find that Aperol is more sweet than bitter. I like it, even though I have a bitter-averse palate (to the point that I don't like beer). Maybe dryness of the Prosecco makes the Prosecco's bitterness come out. I would argue that the main reason for the PDT version being less bitter is that there's less Prosecco

    I was one of the supervisor bar staff for one of the Aperol Spritz bars at the 2019 Tennis Open in Brisbane! It used to be 90 ml Prosecco but they changed the measurements globally to 30ml of Prosecco, I’m not sure why but that’s just what the order was from Aperol Spritz!

    Yeah, in Australia they changed to 2:2:1 ratio on the bottles and website... perhaps the 3:2:1 ratio was originally to cater for those with a not so bitter friendly palate 🤔

    the most important factor for me is the prosecco/cava that is used. for me, it has to be dry and not sweet sparkling wine to compliment the Aperol

    My bottle of Aperol suggests equal parts Aperol and Prosecco. Add soda water and icecubes (no amounts listed).

    Yeah, same with my bottle - i edited me mentioning it out as it would have caused confusion the way I talked about it.. They have always marketing the “it’s easy as 3-2-1” on their bottle and within their marketing until recently..

    I noticed that stirring the original recipe opens up the flavors, where without stirring makes it basically drinking Prosecco at first. I might try reverse loading it to see if that does the trick, keeping it more carbonated.
