Instant Ramen Noodle Stir-Fry Recipe - Pad Mama ผัดมาม่า | Thai Recipes

"Mama" is Thailand's favourite brand of instant noodles, and we love it so much we use it in all sorts of recipes. In this video I show you how to elevate the humble pack of instant noodles into something more sophisticated, and definitely healthier and yummier than just boiling it in hot water!
These Mama noodles have a very unique texture and flavour which work well in so many applications including a noodle salad, which if you haven't tried it, make sure you check out the recipe linked below!
You can change up the vegetables, but I highly recommend keeping the cabbage and the tomatoes. I'm not adding any meat to this but you certainly can. The eggs, however, are so important! The flavour of the eggs once they've been browned in the wok is so much of what makes this dish so yummy.

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZread channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZread videos, her cookbook, and cooking classes.     Is there any Asian dish where; there is dried Ramen underneath sautéed vegetables and meats; were you would have to stir it around to soften up the noodle so you would eat it.? Why I asked this question.¿ Went to fused Asian restaurant with my child . Where was served a dish exactly this way and was told to do exactly that. We politely took his word for it. But she couldn’t finish the dish. It was our first time going. I fear this person might’ve done this to us just to get a laugh for himself..

    This is my wife’s favorite dish from a tiny local Thai place called Gor Gai. Watched your video, cooked pad Mama, and I can say in 36 years I have never pleased a woman more than tonight with this dish.

    I am blessed to have a bunch of Asian groceries in my county, I can get aaaallllllll the Mamas! And some other brands, some from Thailand, others from all over... Vietnam, Indonesia, Korea, etc.

    Why does KZread recommend me this video now years later when I have already finished school. I used to eat a lot of Mama Noodles back then and could have definitely used this recipe. Oh well, not like I can not enjoy it now

    Ah thank you for this. I lived in Thailand for two years, and this was by far my favorite meal. I would eat it every day for lunch at a street vender near the school I worked at. I am looking forward to trying this at home again.

    In my entire life up until I graduated high school, coming from a small town, Mama was the only kind of ramen noodle I’ve ever had so when I finally got to travel and ate other ramen I was so taken aback by the thickness and taste of others. Lol i still love Mama brand the most.

    I grew up in Thailand and in the back street of the school there are grannies selling snacks and street food and this is one of the things they sell (and then my grandma yells at me for eating it and ruining my appetite) Your channel gave me so much nostalgia. Thank you :)

    I have made pancit using ramen noodles instead of rice noodles are as well as rice noodles and it comes out very well my whole family just love pancit

    I love how you made that dish and it looks great and I love stir fried dishes like that and learned to eat Thai food while in Bangkok for the first time decades ago and loved the fried rice which I first tried and enjoyed so much and still cook today at home. The noodles seem to be the center of the dish and I have some which I need to use up along with some vegetables also which I have to cook before they expire.

    I make this about two times a month, a nice quick meal when you want something easy yet filling, all the while tasting good! I also occasionally add some ground pork if I happen to have some that need used up before it goes bad.

    OMG, I had most if not everything in my kitchen, first time making it, WOW! Well ... I did substitute the MAMA brand for those you get in Dollar General 6 Pack for $1, but hey ... it turned out amazing!! Now with paper and pen in hand, watching some of your other videos, I want to try them all!! I also like it a bit more spicy. I couldn't figure out how to put a picture on here but I just can't THANK YOU enough! I'm taking this on the next outing where they ask for people to cook ... YOU ARE AMAZING!!!!!

    This is a wonderful recipe. I like the way of adding the noodles to the eggs so that the flavour is much more enhanced and the noodles are embedded by the eggs making the best of two worlds.

    Tried this (with Nigerian Indomie noodles instead) sautéed some pork chops on the side for hubby and it turned out perfect! Even my little picky eater AKA Son 👦🏾, loved it. Thanks for sharing your recipes.

    Just made this and it was delicious. I can see this becoming a regular dish in the dinner rotation. The flavor is totally crave-able :) We only added one of the packets of red chili flakes but next time will add both. The heat from one packet is pretty mild; I think two will give it a nice kick. Thanks for sharing!

    Pailin's Kitchen 4 trips a month to get dinner at our local Thai restaurant and it costs between $35-$40 per trip. We usually go because my wife of 25 years is craving mama noodles (that's what they call it). I've successfully made the curries and other dishes that my family likes thanks to your videos, just needed this one. Now when she's got the craving I can just make it for a fraction of the cost. I'm so excited 😋. By the way she didn't remember a thing and asked me when she woke up to go to work what video I was so happy about.

    I made this last night. Wow, so easy and so yummy! It will be my go-to Thai noodle recipe. Many thanks. Being single, and following your advice not to leave any as a leftover, I halved everything in the recipe`s ingredient list. For example, I only used one package of noodles. I only used about 1/3 of the salt/flavour pack, given that I`m watching my salt, and that there is a little fish sauce and soy sauce in the ingredient list too. It seemed plenty salty to me. I probably didn't get enough browning on the egg (which I mistakenly beat, before adding them to the wok), but hey, I will get the hang of it. Cheers! P.S. I also made the Japanese Beef Curry From Scratch. A big success too. Even my finicky 84-year old mom gives it a thumbs up. (I cut back on the soy and fish sauce, once again. That was the only change I made.) Brendan in Toronto

    In Malaysia it's called Maggi Goreng bcos we use the 'Maggi' brand of instant noodles & goreng means fry. Pretty much the same like how you cook it but we add chili paste to make it more spicy 😀

    Mauritians make a similar version of this and its sooo YUMMY ! The onions , tomatoes and green chillies goes first then followed by the noodles and seasoning . I like to add lots of black pepper & chopped garlic in mine and garnish with corriander or spring onions and red chilli power that comes with the noodles . #mouthwatering

    I haven't been able to find yum Mama noodles where I am, but I imagine using those instant migoreng noodles (i probably spelled that wrong) would be AMAZING. Thanks for elevating the humble instant noodle for us! :)

    Some places that don't have the Mama brand may have another Thai brand called Yum Yum. It should do the trick I think but the noodles happen to be a little different texture.

    I'm going to try this, though I'm going to add some ground pork, salsa, and sambal-oelek. And substitute instant ramen noddles because I don't have any mama noddles.
